Sardines are not one specific breed of fish, so much as it is a collective term used for a number of small, soft boned species in the Herring family. The term "sardine" comes from the island in which they were originally canned, Sardinia.
Sardines are most commonly known for being small fish packed tightly together in small cans. The fish have been cleaned and deboned before being hand packed in the cans. They can be enjoyed directly out of the can.
Comparatively speaking, anchovies (pictured above) tend to be slightly darker and browner in color than boquerones. On average, they also tend to be slightly smaller.

Boquerones (pictured above) are often referred to as "white anchovies", due to their light appearance. They are slightly bigger and meatier than the average anchovy.

Naturally non-bleached, our Miguel & Valentino Boquerones are large, white, and meaty anchovies, preserved in a glass jar, or tray, and filled with olive oil and vinegar for a smooth, natural texture and flavor. Absolutely no additives or coloring agents are used to maintain these succulent boquerones. They are fished from the Cantabria Sea in the northern region of Spain's Basque Country. These fish live up to their exceptional reputation for superior taste and quality. A classic Spanish tapa, they will melt in your mouth and are a perfect treat with toasted bread and a glass of red wine - Mediterranean style!

Miguel & Valentino Anchovy Fillets in Sunflower Oil 
Our Miguel & Valentino Anchovy Fillets are an exceptional delicacy that are an ideal accompaniment to any dish, or served alone as a tapa. Deeper in color and slightly saltier in taste compared to the boquerones, these anchovies are excellent when added to sauces or salads, as they contribute their strong flavor to the dish. They are marinated in sunflower oil to preserve their rich and firm texture.
