Get Your Home Ready for The Winter

Cajun Fried Turkey

Ingredients


  • 10-pound turkey
  • Peanut oil (3½ gallons)
  • Garlic salt
  • Pepper
  • Onion powder
  • Cajun injection seasoning

Prep time: 10 minutes

Cook time: 35 minutes


Instructions 


1. Make sure turkey fryer is located outdoors in a safe area.


2. Season your turkey inside and outside with suggested seasonings.


3. Heat oil to 350° F.


4. Place the turkey neck-side down in a drain basket. Gently lower the turkey into the hot oil until completely covered. Continue frying until the turkey is cooked through.


5. Fry your turkey for about 3.5 minutes per pound. For a 10-pound turkey, you’ll fry for about 35 minutes.


6. Remove from the oil, drain and allow to rest for 15 minutes before carving.

Why is this recipe special to me?


It’s my favorite because while the turkey is cooking, we get to play a family game. Then we go around the room and discuss what we are thankful for.

Mexican Churros

Ingredients


• 1 cup water

• 1 tsp. vanilla extract

• 1/8 tsp. salt

• 2 Tbsp. butter

• 1 cup flour, sifted twice

• 1 egg, whisked

• 2 ½ cups oil for frying 

• Sugar and 1 tsp. cinnamon (to coat churros after cooking)

Why is this recipe special to me?


I love some good freshly made churros, especially on the holidays. I loved to go to plazas back home and get some warm churros on a cold night and enjoy their delicious taste and the notes of cinnamon, which I think are the perfect flavor for the holiday season. They just feel and taste like home!

Instructions 


1. Preheat the oil in a pot until it reaches approximately 320°F. You can use a candy thermometer to verify temperature.


2. In a separate pot, heat the water, butter, vanilla extract and salt on medium heat.


3. When the water is at boiling point, add all the flour at one time and mix very fast with a wooden spoon until all the ingredients are incorporated.


4. Remove the pot from the heat and let cool for 1 minute.


5. Add the whisked egg and mix into the dough with the help of a handheld mixer. Mix for a few minutes until dough looks soft and is no longer sticking to the bottom of the pot.


6. Add the dough to a piping bag with a star tip. (The disposable ones with a pink tip from Wilton sold at Walmart work perfectly.) Make sure there are no air bubbles left in the dough.


7. Pipe 6-inch-long churros directly into the hot oil and cut the dough with the help of scissors. You can also pipe the churros onto a baking sheet with parchment paper and then transfer them to the hot oil.


8. Cook the churros for about 2 minutes on each side until golden, for a total cooking time of 4 minutes.


9. After the churros are fried, transfer them to paper towels to drain the excess oil. While they are still hot, toss them in a mixture of sugar and cinnamon and coat them completely.


Enjoy them while they are still warm.
