CANADIAN CULINARY CHAMPION CHEF ALEX KIM PRESENTS TASTING MENU OF CHAMPIONSHIP-WINNING FARE AT FIVE SAILS

 

Six-Course Menu Showcasing Kim’s Gold Medal-Winning Dishes Takes Centre Stage at Waterfront Restaurant Exclusively Until March 19




VANCOUVER, BC February 21, 2025 — Five Sails Culinary Director and 2025 Canadian Culinary Champion Chef Alex Kim is hosting a tasting menu showcasing the dishes that earned him the title of Canada’s Top Chef at the Glowbal Restaurant Group waterfront destination located in the Pan Pacific Hotel (999 Canada Place) until March 19 exclusively.


Available for $155 per guest plus tax and gratuity, the tasting menu spotlights the BC-focused fare that helped Chef Kim turn heads and tempt the palates of judges at the recent competition and includes dishes such as BC Side Stripe Shrimp (crudo, yuzu gel & vinaigrette, shrimp shell tuille, cucumber), Sablefish & Scallop (Haida Gwaii sablefish terrine, Pemberton roasted sunchokes, Okanagan pear, toasted sunflower seed), Duck & Mushroom (Fraser Valley dry aged duck breast, chestnut mushrooms lardo ragu, celeriac, Parisian gnocchi),and more.


The month-long tasting menu can also be complemented with wine pairings curated by Five Sails Head Sommelier Alexandre Blais that spotlights celebrated wineries in BC’s backyard like Little Engine, Tinhorn Creek, Cedar Creek, Hillside, La Stella and Cedar Creek for an additional $95++ per person, with an additional Signature Sommelier Pairing option available for $195++ per person.

Chef Kim is the fifth BC-based chef to win a Canadian Culinary Championship title following Melissa Craig of Whistler’s Bearfoot Bistro in 2008, Alex Chen and Roger Ma of Vancouver’s Boulevard Kitchen and Oyster Bar in 2018 and 2020, respectively, and Jasper Cruickshank of Whistler’s Wild Blue Restaurant + Bar in 2024.
