Down the CFS Produce Aisle: Sweet Citrus Sunshine

citrus selection.jpg

It's the middle of winter, which in our land of bountiful summer fruits, can feel like a drought! Never fear, the citrus is here, ready to fill you with the extra doses of seasonal immunity-boosting vitamins you need, not to mention satisfy that craving. And think beyond the lunchbox! These juicy fruits are wonderful tossed in a salad, juiced or added to a smoothie, salad dressing or sauce. Our Produce Aisle is loaded with a great selection of citrus, so fill up your basket and enjoy! If you're juicing or just a hardcore citrus lover, consider ordering your favourites by the case to save money and ensure your supply.

Some of the Health Benefits of Citrus

  1. The obvious one - vitamin C! Citrus fruits are an outstanding source of this immune-boosting vitamin, which is why reach for them during cold and flu season. While they won't make you completely invincible, they are proven to reduce the duration and severity of your illness. Vitamin C also helps the body absorb iron and has a hand in collagen production.
  2. They're a great source of fiber, which helps you feel full longer. Most of it is soluble, which helps lower cholesterol and blood sugar levels. The insoluble fiber helps with digestion.
  3. Citrus contains flavonoids, which can help lower LDL cholesterol levels and keep the heart healthy. Vitamin C has also been shown to reduce the risk of heart disease.
  4. Citrus fruits have a low glycemic index, which means the glucose is released into your bloodstream slowly, without an energy crash later.
  5. They have a high water content, which make them both filling and thirst quenching.

Where to start? Here's our handy Citrus Guide to help you pick your next favourite.

valencia.jpg

Valencia Oranges

These are the best oranges for juicing! Thin-skinned with a few seeds, Valencia oranges are sweet and delicious.

navel.jpg

Navel Oranges

Often considered to be the tastiest oranges, Navels have a distinct navel, or belly button, to identify them. Seedless and easy to peel. We've got these beauties both loose and bagged.

cara cara.jpg

Cara Cara Oranges

We love the beautiful pink colour inside these oranges! The colour comes from the orange's high lycopene content, which is great for eye and heart health. Super sweet and aromatic with a flavour similar to a tangerine.

minneola.jpg

Minneola Tangelos

A cross between a tangerine and grapefruit, the Minneola Tangelo is a sweet-tart fruit, exotic in flavour and extremely juicy.

blood oranges.jpg

Blood Oranges

Blood oranges are sweeter than other oranges, they're easier to peel, and they have fewer seeds. Their juice is delicious, but should be used the same day it is juiced. The higher sugar content in blood oranges makes the juice ferment more quickly.

citrus salsa.jpg

Citrus Salsa

A fresh, sweet and tangy citrus salsa! Use a variety of oranges for extra flavour and colour. Amazing in tacos, on top of fish or grilled tofu, or paired with your favourite tortilla chips.

Ingredients:

  • 2 large oranges, supremed and cut into bite sized pieces
  • 2 large grapefruits, supremed and cut into bite sized pieces
  • 2 tbsp lime juice (1 lime)
  • 1 jalapeno pepper, finely diced
  • 1/4 cup red onion, finely diced
  • 2 tbsp cilantro (or more to taste), chopped
  • salt to taste

Directions:

Mix everything, season with salt to taste and enjoy!

blood orange margaritas.jpg

Blood Orange Margaritas

Perhaps the perfect drink to enjoy with fish tacos and the delicious citrus salsa, above, blood orange margaritas are sweet tart perfection. The ultimate winter cocktail when you need a little boost of sunshine!

Ingredients:

  • 1 quart fresh blood orange juice or fresh orange juice (about 12 blood oranges or 8 large navel oranges)
  • 1 1/2 cups fresh lime juice (about 12 limes)
  • 1 1/2 cups Cointreau or other triple sec
  • 3 1/2 cups silver tequila
  • Kosher salt
  • 1 blood orange wedge, plus 12 thin blood orange slices
  • Ice

Directions:

  1. In a large pitcher, mix the blood orange juice with the lime juice, Cointreau and silver tequila. Refrigerate until chilled, at least 30 minutes.
  2. Spread a small mound of salt on a small plate. Moisten the outer rim of 12 martini glasses with the orange wedge, then dip the rims into the salt to lightly coat.
  3. Add ice to the pitcher and stir well, then strain into the prepared glasses. Garnish each margarita with a blood orange slice and serve.
  4. Make Ahead! This margarita recipe can be prepared through Step 1 and refrigerated, covered, overnight.

Say No to Food Waste

inglorious produce.jpg

With all of this much-needed focus on less waste, let's not forget about food waste! Restaurants and grocery stores are some of the biggest culprits when it comes to wasting perfectly good food. The Community Farm Store recognizes this and has long been committed to reducing as much waste from our store as possible.

Our Inglorious Produce selection - which is an ever-changing array of slightly overripe, bruised or misshapen produce - exists for this exact reason. For only a dollar per pound, you can choose from an awesome variety of items, sometimes pretty darn perfect. It saves our customers money and helps organic produce be accessible to a larger community. Plus, it keeps food from being wasted.

The compost from our Produce Department goes to local farms for animals and gardens.

CFS Bulk: Brown Lentils

lentils.jpg

Brown Lentils

Bagged organic brown lentils are new to our bulk shelves! They come in perfectly sized 1.5lb bags, but you can always order a large sack at Customer Service.

The difference between brown lentils and green lentils is that brown lentils have a higher fiber content. Brown lentils have a mild, earthy flavour while green lentils taste robustly peppery and take more time to cook because of their harder outer layer.

stuffed squash.jpg

Creamy Lentil Stuffed Butternut Squash

Roasted butternut squash gets stuffed with the most flavourful, umami-packed lentil filling, then drizzled with a creamy sauce made from the scooped out squash. A hearty and satisfying main course for any winter dinner!

Ingredients:

  • 3 medium butternut squash
  • Regular olive oil or avocado oil for roasting
  • Kosher salt and freshly cracked black pepper

Creamy Lentil Filling

  • 3 tablespoon olive oil
  • 2 large yellow onions, diced
  • 6 cloves garlic, minced
  • 1 tablespoon roughly chopped fresh sage leaves
  • 2 teaspoons roughly chopped fresh rosemary leaves
  • 2 tablespoons tomato paste
  • 1/3 cup (80 mL) dry red wine (such as Pinot Noir, Shiraz/Syrah, or Malbec)
  • 1 cup (190g) brown lentils
  • 2 ⅔ cups (640 mL) vegetable or bone broth
  • 1 bay leaf
  •  1 teaspoon sweet or hot paprika
  • 2 ½ tablespoons tahini
  • 2 teaspoons white miso paste
  • 2-3 teaspoons good-quality balsamic vinegar

Butternut-Tahini Sauce

  • 1 cup roasted butternut squash (from the scooped out halves)
  • 2 tablespoons tahini
  • 1 tablespoon extra virgin olive oil
  • 3-6 tablespoons water or vegetable/bone broth, more as needed to thin the sauce
  • Salt and pepper to taste
  • Chopped Italian flat-leaf parsley, for garnish

Instructions:

  1. Roast the squash. Preheat the oven to 425°F (218°C). Slice each butternut squash in half and scoop out the seeds and sticky stuff with a spoon. Place each squash half, cut side up, on a large baking sheet and rub each with a bit of the oil and season well with salt and pepper. Roast for 45-50 minutes, or until the flesh is fork tender and lightly browned.
  2. Make the Creamy Lentil Filling. Heat the 3 tablespoon olive oil in a large frying pan over medium-high heat until hot. Add the onions and season with a pinch of salt and sauté for 8-9 minutes, stirring occasionally to prevent burning but not too often so that they can brown, or until most of the onions are browned. Add the garlic, sage and rosemary and cook for 2 minutes, stirring frequently to prevent burning. Add the tomato paste and stir to combine into all of the ingredients, and cook for 2-3 minutes.
  3. Reduce heat to medium and pour in the red wine and deglaze the pan, stirring up any browned bits, until the liquid has evaporated and the smell of alcohol has dissipated, about 2-3 minutes.
  4. Add the vegetable broth, along with the lentils, bay leaf, and paprika. Stir to combine and increase the heat to bring to a boil. Once boiling, reduce heat to maintain a rapid simmer, and simmer until the lentils are just tender and most of the liquid has been absorbed, about 30 minutes.
  5. Reduce the heat to low. Add the tahini, miso, and balsamic vinegar, and stir until well incorporated. Taste for seasonings, adding about 1/2 to 1 teaspoon kosher salt and black pepper to taste. Set aside.
  6. When the roasted squash is cool enough to handle, use a large spoon to scoop out the flesh from each squash half, leaving a ½ to ¾-inch -thick border around the sides and bottom.
  7.  Transfer 1 cup of the butternut squash flesh to a food processor (set aside the rest for another use, such as a risotto, pasta, oatmeal, or smoothie).
  8. Reduce oven temperature to 350F° (175°C).
  9. Stuff the lentil filling into each squash cavity. Add the stuffed squash halves to the oven and bake for 15 minutes, or until everything is warmed through.
  10. Meanwhile, make the butternut tahini sauce. To the food processor with the 1 cup squash flesh, add the tahini, olive oil, salt and pepper to taste, and blend until smooth. Stream in the water or broth, scraping down the sides as you go, until you have a pourable but thick sauce.
  11. To serve, drizzle the butternut tahini sauce on top of the stuffed baked squash. Garnish with chopped parsley, if desired. Enjoy!

This happy, feel-good kale salad recipe is packed with colorful vegetables, crispy chickpeas, avocado, cranberries, and pepitas. Great for lunch!

Ingredients:

Carrot Ginger Dressing

  • ½ cup chopped roasted carrots, from 3/4 cup raw carrots
  • 1/3 to ½ cup water
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons rice vinegar
  • 2 teaspoons minced ginger
  • ¼ teaspoon sea salt

Salad

  • 1 batch Roasted Chickpeas

  • ½ teaspoon extra-virgin olive oil
  • 1 small carrot, grated
  • 1 small red beet, grated
  • ½ watermelon radish, very thinly sliced
  • 1 avocado, cubed
  • 2 tablespoons dried cranberries
  • ¼ cup pepitas, toasted
  • 1 teaspoon sesame seeds

Instructions:

  1. Make the dressing and roast the chickpeas: Preheat the oven to 400°F and line a large baking sheet with parchment paper. Toss the chickpeas with a drizzle of olive oil and sprinkle with pinches of salt and pepper. Place the carrot pieces for the dressing in their own corner on the baking sheet to roast alongside the chickpeas. Roast for 25 to minutes, or until the chickpeas are browned and crisp and the carrots are soft. Set the roasted chickpeas aside. Transfer the carrots to a blender and add the water, olive oil, rice vinegar, ginger, and salt. Blend the dressing until smooth and chill in the fridge until ready to use.
  2. Place the kale leaves into a large bowl and drizzle with the lemon juice, ½ teaspoon of olive oil, and a few pinches of salt. Use your hands to massage the leaves until they become soft and wilted and reduce in the bowl by about half.
  3. Add the carrot, beet, watermelon radish, half of the cubed avocado, cranberries, pepitas, a few more good pinches of salt and a few grinds of pepper, and toss. Drizzle generously with the carrot ginger dressing. Top with the remaining avocado, more dressing, the roasted chickpeas and sprinkle with the sesame seeds. Season to taste and serve.
