Down the CFS Produce Aisle: Nettles

Nettles

A true sign of spring in the valley is the arrival of nettles! Harvested locally, these tender wildcrafted leaves are so delicious and nutritious - try them in a soup or stew, or brew the leaves into a healing tea.


New to nettles? Stinging nettle is a perennial wild edible plant, well known for the sharp hairs that break off and sting when the plant is touched. They are loaded in vitamins and a remedy for many conditions. The whole plant is covered in tiny, sharp, stinging hairs, and fuzzy little flowers. Nettles taste a lot like spinach when cooked. 


Nettles also pack some impressive health benefits. Taken as a tea, nettles can help clear mucus congestion, allergies and asthma, diarrhea, water retention and skin irritations. They can also help nursing mothers with milk production and aid in digestion. Nettles help alleviate anemia and poor circulation. Some of their awesome nutrients include chlorophyll, iron, potassium, phosphorus, sulfur, sodium, chlorine, and vitamins. They also have more protein than any other vegetable, so they have high levels of easily digestible amino acids. Wow!

How to Prepare Nettles

If you're looking to enjoy your nettles in a simple, delicious and nutritious way, rinse them and drop them - still dripping - into a pan and steam, covered, for about 20 minutes. Then chop, season with salt, pepper and butter, and enjoy!

Spring Break Adventures

The kids are reveling in their blissful two week break from the confines of the classroom, with most Cowichan Valley students on Spring Break from March 14th-25th. Planning on some fun family hikes or road trips to Tofino? Be sure to visit and stock up on the yummiest, most nutritious adventure essentials. Easter is Around the Corner

With a lovely mid-April Easter this year (Easter Sunday is April 17th), we can look forward to fresh blooms in the garden and warm sunshine for our egg hunts. 


We have lots of delicious, fairtrade goodies for hiding and basket filling on their way, and we're well stocked with Baraka's wonderful baby baskets - the perfect size for little hands to collect their treasures.

Easter Goodies

Celebrate Spring with a beautiful new collection of sweet treats from Galerie au Chocolat! Nothing but the finest Belgian chocolate is used, along with organic, locally sourced, and fairtrade ingredients. The result? Pure indulgence.


We're pretty excited about Camino's new fair trade, organic chocolate eggs! Each box contains an assortment of delicious dark, milk and white chocolate eggs, all filled with praline made with caramelized hazelnut bits.

Natural Egg Dyeing 

Celebrate springtime with beautiful, handmade Easter Eggs! Why use chemical-laden colourings when you can make gorgeous colours and patterns at home using things you already have on hand? Often white eggs are preferred as they hold colour best.


Natural Dyes:

  • Blue on White Eggs/Green on Brown Eggs - I cup chopped red cabbage per cup of water. Add just enough water to cover the cabbage.
  • Red - 2-3 pounds of red beets, unpeeled and cut into one inch chunks. Add just enough water to cover.
  • Lavender or Red - 1 cup red onion skins per cup of water.
  • Pink on White Eggs/Maroon on Brown Eggs - 1 cup shredded beets per cup of water.
  • Orange on White Eggs/Rusty Red on Brown Eggs - 1 cup yellow onions skins per cup of water.
  • Yellow - 2 tbsp ground dry turmeric per cup of water.
  • Beige/Taupe on White Eggs - 1/2 cup of ground coffee per 4 cups of water.


Instructions:

  1. Combine water and dye matter (cabbage, onions, coffee...) and bring to a boil Reduce heat to a simmer and cover for 15-30 minutes. The dye is ready when it is a few shades darker than required. Dip a little onto a white dish to check colour.
  2. Let cool and strain the pulp out. It's okay if there are small bits left, this will add variation in colour.
  3. Add 1 tbsp of vinegar per cup of strained liquid to set dye. Leave eggs in dye longer for stronger colour.

Organic Morimachi Genmaicha Tea from Two Hills

This organic Japanese genmaicha is a beautifully balanced combination of bright, steamed green tea and roasted rice.


Origin & History

Genmaicha was originally created to make use of lower-quality sencha, as the roasted rice softened any astringency. In this case, we're using a sencha that is delicious on its own, because we love the flavour of a high-quality genmaicha. This particular batch of Genmaicha comes from the foothills of Mount Fuji.

Creating a Nature Table

A nature table is a celebration of the season and a beautiful way to make space for treasures you find outside. Whether you're using it as a sensory learning tool for little ones or simply love nature in your home, they are a great way to brighten up a room!


We have collected rocks and wrapped them in jewel tone wool yarn. Simple crafts with found treasures can be a great project for the whole family. The rocks are nestled in an old bird's nest that we knew was abandoned. When hunting for treasure in nature it is important that we aren't disturbing the creatures who live around us!


A candle on your nature table is a lovely way to bring light into the space. Candles are especially warming during shorter days of winter. Flowers are a staple for nature tables. Whether they are a full bouquet of wild flowers or simple dandelions, flowers bring color and joy to your nature table. Even in the middle of winter a bouquet of dried flowers can be a stunning addition.

The wreath that tops the three Playcottons is made from a small willow branch. The addition of art that has been collected or hand made is a great way to inspire creativity. By making something lovely for your nature table, little ones can look forward to displaying something they are proud of creating.

Grilled Asparagus Salad with Fried Eggs

Asparagus and fried eggs are a classic springtime combo for good reason--they're delicious together. Medium-thick asparagus spears will char nicely outside while staying crisp-tender within.


Ingredients:

  • ¼ cup extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • Kosher salt and freshly ground pepper
  • 1 pound medium asparagus (trimmed)
  • 2 tablespoons unsalted butter
  • 6 large eggs
  • 6 cups baby arugula
  • ¾ cup freshly shaved Parmigiano-Reggiano cheese (about 2 1/2 ounces)


Directions:

  1. In a small bowl, whisk 3 tablespoons of the olive oil with the lemon juice and mustard. Season with salt and pepper.
  2. Light a grill or preheat a grill pan. In a large bowl, toss the asparagus with the remaining 1 tablespoon of olive oil and season with salt and pepper. Grill the asparagus over high heat until tender and charred in spots, about 5 minutes; keep warm.
  3. Meanwhile, in a large nonstick skillet, melt the butter over moderate heat. Working in batches if necessary, cook the eggs sunny-side up until the whites are firm and the yolks runny, about 5 minutes. Season with salt and pepper.
  4. In a bowl, toss the arugula with the lemon vinaigrette and transfer the salad to plates. Top with the asparagus, fried eggs and cheese shavings and serve at once.

Tomato Rice

This Tomato Rice Recipe is loaded with aromatics and layers of heat but so easily made for a simple side or lunch. Comforting and warming! Throw in some chicken or ground beef and you've got yourself a delicious entrée. 


Ingredients:

  • 1 cup white basmati rice
  • 2 tablespoons ghee or unsalted butter
  • 6 green or white cardamom pods
  • 2 (3-inch) cinnamon sticks
  • 2 blades mace or 1 teaspoon powder
  • 1/4 teaspoon whole cloves
  • 1 small red onion, cut in half lengthwise and thinly sliced
  • 2 to 3 fresh green Thai, cayenne, or serrano chiles, to taste, stems removed, cut lengthwise into thin strips (do not remove the seeds)
  • 4 medium garlic cloves, thinly sliced
  • 1 teaspoon shredded fresh ginger
  • 1 (14.5-ounce) can diced tomatoes
  • 1 teaspoon sea salt
  • 1/4 teaspoon ground turmeric
  • 1/4 cup finely chopped cilantro leaves and tender stems

 

Directions:

  1. In a medium bowl, place the rice. Fill the bowl halfway with water to cover the rice. Gently rub the grains through your fingers, without breaking them, to wash off any dust or light foreign objects (like loose husks), which will float to the surface. The water will become cloudy. Drain and repeat this process three or four times, until the water remains relatively clear; drain again. Fill the bowl halfway with cold water and let it sit at room temperature for 20 to 30 minutes, until the kernels soften. Drain one more time.
  2. In a medium saucepan over medium-high heat, heat the ghee. Add the cardamom, cinnamon, mace, and cloves. Cook, stirring, for 15 to 30 seconds, until they sizzle, crackle, and smell aromatic. Add the onion and cook, stirring frequently, for 5 to 7 minutes, until light brown around the edges.
  3. Mix in the chiles, garlic, and ginger. Cook, stirring, for about 1 minute. (You don't want the garlic to brown because its nutlike crunch is important to the rice's texture.) Stir in the tomatoes, with their juices, and the salt and turmeric. Simmer, uncovered and stirring occasionally, for 5 to 7 minutes, until the tomatoes soften.
  4. Add the drained rice and toss gently to coat with the tomato sauce. Pour in 1½ cups water and stir once to incorporate. Bring to a boil over medium-high heat. Cook for 5 to 8 minutes, until the water has evaporated from the surface and craters are starting to appear in the rice. Then (and not until then) stir once to bring the partially cooked layer from the bottom of the pan to the surface. Cover with a tight-fitting lid and reduce the heat to the lowest possible setting. Cook for 8 to 10 minutes (10 minutes for a gas burner). Turn off the heat and let the pan sit on that burner, undisturbed, for 10 minutes.
  5. Remove the lid, fluff the rice with a fork, and sprinkle with the cilantro. (Remove the cloves, cardamom pods, and cinnamon sticks before you serve, or just remind folks to eat around them.)

Blueberry Baked Oatmeal

This blueberry baked oatmeal recipe is a delicious brunch or breakfast! Use fresh or frozen berries, or swap in your favourite seasonal fruit.


Ingredients:

  • 2 tablespoons ground flaxseed + 6 tablespoons warm water
  • 2 cups whole rolled oats
  • ½ cup slivered almonds
  • ½ cup hemp seeds
  • ⅔ cup coconut flakes
  • 1/4 cup brown sugar or coconut sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ¾ teaspoon sea salt
  • ¾ cup almond milk, at room temp
  • 1/4 cup maple syrup
  • 3 tablespoons melted coconut oil
  • 1 banana, chopped
  • 1 cup strawberries, sliced
  • ½ cup blueberries


Instructions:

  1. Preheat the oven to 350°F and spray an 8x8-inch (or similar) baking dish with cooking spray.
  2. In a small bowl, combine the flaxseed and warm water and set aside to thicken for about 5 minutes.
  3. Reserve 2 tablespoons of the almonds, hemp seeds and coconut flakes and set aside. In a large bowl combine the oats, the remaining almonds, hemp seeds and coconut flakes, and the baking powder, cinnamon, brown sugar and salt.
  4. In a medium bowl, combine the almond milk, maple syrup and coconut oil and whisk to combine. Stir in the flaxseed mixture and blend until smooth.
  5. Pour the wet ingredients into the bowl of dry ingredients and stir to combine.
  6. Layer the bananas and strawberries in the baking dish and spread the oat mixture on top. Sprinkle with the blueberries and the reserved almonds, hemp seeds and coconut flakes.
  7. Bake for 40-50 minutes or until the top is crisp and the middle is set. I find it easiest to wedge a knife in and make sure the middle has thickened nicely. Remove and let cool for 15 minutes before serving.
