The Diamondhead Community Church Library maintains a collection of media for all ages that provides the opportunity for studying, learning, and teaching. It is a resource supporting personal and congregational growth in our Christian faith and living so the members and friends of Diamondhead Community Church continues to foster an environment that “seeks to meet the needs of each other”.
ASH WEDNESDAY, this year, the first Wednesday in March, marks the beginning of the 40-day observance of self-sacrifice and discipline for many Christians, LENT. In March, St. Patrick’s The day is celebrated; it is time to plant greens in our gardens. It is also the month spring arrives, and the outdoor plants begin to grow again. The online seed catalogs have a minimum of five pages of just lettuce, including head, leaf, romaine, loose-leaf, Bibb, and butterhead, along with miscellaneous greens such as escarole, arugula, endive, chard, mustard, cress, and turnip. Note that most producers promise their varieties have superstar status and restaurant quality, are exclusive, and are the easiest to grow. When choosing new varieties of greens, whether planting or purchasing, consider the taste; do you like subtle or bold flavors? How much time do you want to spend preparing greens? Do you like your greens raw, sautéed, stir-fried, steamed, or juiced? When planting, select a variety of days to maturity appropriate for MS, consider the size of the area where the greens will reside, either in a garden plot, window box, or patio container and decide whether to use transplants or seeds. In our area, now is the time to transplant collards and plant beets (beet greens with butter are delicious), Swiss chard, spinach, radishes, and English peas.
Below are tips for preparing greens:
Select only the freshest leafy greens. Eliminate greens with yellowed, wilted leaves. Remove the stems from the greens, place the greens in a large bowl filled with cold water, and agitate. Spin the greens in a salad spinner, drain, and continue until the water is free from any residue. Spread the rinsed greens on several layers of paper towels to dry. Change the paper towel as often as needed to promote thorough drying. Store dry greens in a damp kitchen towel and place the towel in an open plastic bag in the crisper area of the refrigerator. Greens store has been doing very well for up to 3 days.

Save the water from boiling cabbage on St. Patrick’s Day and give your houseplants a healthy dose of nutrients. Purchase the complete collection (DVD) and enjoy Rosemary & Thyme, a British mystery series. Rosemary Boxer and Laura Thyme are gardeners and detectives who search the gardens of England and Europe for clues to solve their cases. Purchase a packet of green Zinnia seeds.
LIBRARY HOURS — the library is open on Sunday morning before the Church Service and for browsing any day the Church Office is open.
