North Dakota

Hot Dish

We had such a great time with all the volunteers from North Dakota and wanted to share a "Hot Dish" recipe that they share with family and friends and hoping you do too.


Runza Casserole

Ingredients:

2 pkgs. refrigerated crescent rolls

2 lbs. ground beef

2 Tb butter

4 c. shredded green cabbage

1 large finely chopped yellow onion

1 1/2 c. grated Mozzarella cheese

Salt and pepper to taste

Preparation:

Preheat oven to 350 & grease 9X13 baking dish with nonstick spay. Set aside.

Unroll a tube of rolls but do not separate, and place rolls in bottom of the baking dish. Bake 5 minutes.

In a large skillet over medium-high heat, cook ground beef with seasonings until no longer pink. Drain fat and push meat to outer edges.

Add butter to center of skillet. Once melted add onions and cook for 2 minutes.

Add cabbage to entire mixture and cook down until wilted.

Spread mixture over baked crescent rolls. Top with mozzarella and remaining sheet of crescent roll dough.

Bake until top is golden brown, about 20 - 25 minutes. Let rest for 5 minutes before serving. Enjoy!

Camp Ray-Ray #28 was

an Incredible Success!

Camp Ray-Ray #28 was fantastic in so many ways! We hosted 12 families including 2 brand new families and 5 legacy families (and while we were there, we discovered another new family who will be joining us next year!) Though we were small in numbers we more than made up for it in fun brought in by a bus load of students and chaperones from Bishop Ryan Catholic School who brought so much help and excitement to the Camp. Some highlights included:



·      Sarah, Abbi, and Colleen, taking us on a nature walk to discover the beautiful flowers and plants of the mountains.

·      Dakota, Hunter, and Rory taking us on a wildlife adventure to experience firsthand creatures great and small hidden in the mountains.

·      Tracy’s fabulous Flower Power fashion show that had us strutting our stunning accessories while laughing and dancing the night away with Don providing the music for the evening.

·      A beautiful Remembrance Ceremony in which we all got to participate in remembering past angels and share from our hearts words of hope and love.

·      The Camp favorite of BINGO with fabulous prizes for many lucky winners.

·      An outdoor Mass in which even the deer showed up to praise God.

·      And finally, a family meeting which took us back to our roots of supporting one another and helping provide direction for the future.

 

I am so grateful and blessed to be a part of this wonderful organization of families, volunteers, and benefactors! Thank you all for being part of Ray-Ray’s dream!

A Night in Africa

10th Anniversary Gala

Auraria Campus, Denver


The gala benefits Crazy Love Africa (CLA) whose mission is to serve, restore, empower, and strengthen vulnerable women in Uganda many who are HIV. Jess Wiederholt, an Angels Unaware family member and Camp Ray-Ray alumni, is CEO of CLA that touches the children in their care, through education, community, and sustainable job creation. By working alongside women as global sisters, CLA creates change, while addressing inequality, strengthening families, and communities. Angels Unaware considers CLA our sister nonprofit.

BOOK CLUB

We are excited to announce a wonderful opportunity for families impacted by HIV, volunteers, and donors to come together and engage in meaningful discussions centered around Savannah Guthrie's insightful new book, "Mostly What God Does." This initiative aligns beautifully with Angels Unaware's mission of fostering connections and encouragement within our community.
