We will be reopening Feb 13th after our annual winter closure.   For a small family farm with limited staff, winter is our time to prepare for the coming year. We begin to prune the fruit trees, berry bushes, and grapes on our almost 8 acres.  It is an important time for us to finish our honey wines for late winter and spring offerings. We catch up on our production demands and refresh our honey shelves, while also preparing for our 2018  Beekeeping courses and events (both on and off farm).  In addition to catching up on the myriad of administrative tasks that have slipped over the previous busy  far ming year,   most importantly we spend time together as a family.  

  We so appreciate the patience of our customers, many of whom came to one of our   3 Saturday openings during the closure.
2018 Customer Appreciation Week   Feb 13 - 18, 2018
From February 13 to the 18th we will be celebrating our annual customer appreciation week to mark the return of friends and neighbours after our winter closure.  Please see the coupon at the bottom of our newsletter and feel free to use it. Normal store hours of 6 days week (see store hours above) will resume on Feb 13th.   Check out our many in-store specials.

Beginner Beekeeping Course
Once again we will be offering the B.C. Honey Producer's Association Certified Beginner Beekeeping Course.   The first of 8 sessions, starts Feb 19 and runs until April 21, 2018.  Taking the course is a great way to learn about bees, even if you are not planning on beekeeping. Participants receive useful resources including a one year membership to the B.C. Honey Producers Association. If you are interested in the course you can contact Judy at info@campbellsgold.com 
February recipe ** Skinny Honey-Lime Chicken Enchiladas**
These enchiladas come from  the U.S. National Honey Board publication "The Honey Feast".   This simple recipe is not only tasty but will sustain you throughout the day (and year!). 
  • 2 large - chicken breasts, cooked and shredded
  • 12 oz - green enchilada sauce
  • 1/3 cup - honey
  • 1/4 cup  - lime juice, (about 2 limes)
  • 1 tablespoon  - chili powder
  • 1 teaspoon  - garlic powder
  • 8 medium - whole wheat tortillas
  • 2 cups - Mexican cheese, shredded
  • 3/4 cup  - 1% milk
  • 4 tablespoons  - cilantro 
  • 1/3 cup - light sour cream

Preheat oven to 350 degrees. In a 9 x 13 baking dish, pour a few ounces of enchilada sauce to slightly cover the bottom of your dish. Set aside. Whisk together the honey, lime juice, chili powder and garlic powder. Pour this marinade over the shredded chicken and stir so all chicken gets covered in marinade. Let sit for 30 minutes. Place chicken into middle of tortilla and top with cheese. Roll tightly and place into baking dish. Repeat. Sprinkle remaining cheese on top. Coat the enchiladas with the leftover marinade using a pastry brush. Bake for 20 minutes or until tortillas are slightly brown.

While enchiladas are in the oven, make the enchilada sour cream sauce by placing the milk, remaining enchilada sauce, 2 tablespoons cilantro, and 2 tablespoons sour cream in a small saucepan on medium heat. Stir frequently until thoroughly heated.

Drizzle the enchilada sour cream sauce as desired onto enchiladas which can also be topped with leftover sour cream and cilantro.

Kid's Corner - Homemade Valentine's Day Card

With Valentine's Day fast approaching, and in the tradition of homemade valentine's day cards, here is an easy, cute, and creative card that can be made by school-aged children with little guidance, or by younger children with a little more help.  

  

Materia ls

⦁Coloured paper

⦁Glue

⦁Balloons

⦁Googly eyes

⦁Scissors

Fold a piece of coloured paper in half to make the card. Glue a balloon onto the front of the card to make an elephant's head. Glue the eyes onto the elephant. 

To make the elephant's ears, cut out two hearts from paper of the same colour as the balloon. Glue them beside the elephant's head. 

Now, personalize it to your liking!
