The Farmer Foodshare Donation Station program collects donations of fresh food and cash from customers at the Carrboro Farmers' Market. The money is used directly at the Market to purchase food from farmers. That food is then directly donated to those who are hungry in our community. The Carrboro Farmers' Market Donation Station is partnered with TABLE, IFC Food Pantry, Immigrant and Refugee Community Partnership, and PORCH. 
Look for the Donation Station at the Market on Wednesdays and Saturdays, and visit   www.farmerfoodshare.org  to find out how to volunteer! 
Food Waste Drop Off Program

Market visitors can bring all of their food waste from home and drop it off at the Carrboro Compost Collection during SaturdayMarket hours! The Carrboro Farmers' Market, Orange County Solid Waste Management, and a team of compost monitor volunteers set up a collection site for visitors to drop off compostable food waste year round, every Saturday. This isn't your run of the mill backyard compost! The Compost Collection goes to a commercial composting company, Brooks Contractor, who accepts a wide range of materials. All food scraps and food related paper can be composted at the market, including fruits, vegetables, meat, fat, bones, and dairy products as well as soiled napkins, paper towels, and plates.   Look for the sign, the cart, and bring us your food waste!  No plastic, metal, UPC produce stickers, or other non-compostable items, please.

What's Happening at Market

Happy Friday Everyone! 

We are still recovering from Tomato Day last Saturday!  Again, thanks for supporting CFM's biggest event of the year!  we had so much fun!

This week -- we are excited to Younes & Emma Sabouh of Tandem Restaurant with us making Locally Sourced Red Pepper, Baby Heirloom Tomato and Yuzu Gazpacho!

Tandem Restaurant is a 'dream come true' for recently newlyweds and Co-Owners Chef Younes Sabouh and GM Emma Sabouh.  After working together for the past 6 years they decided to take the plunge and open their own space in Carrboro where they live and raise their family.  The core focus of Tandem is to offer great food in a warm relaxing environment - a place in the community where people come to relax, unwind and have fun. The name Tandem reflects the closeness of their working and personal relationship.  Tandem has been a life long dream for the couple, a dream that has come true in 2016, a dream that they want to share with everyone.  Tandem is located in the Carr Mill Mall Shopping Center off North Greensboro Street.

Chef Younes has deep culinary roots from his mother and his childhood growing up in Morocco where he learnt the traditional style of cooking using techniques like braising, cooking in clay, over fires.  Following the bulk of his culinary training  - throughout numerous regions in France - working under esteemed chefs, he was offered the role as the exclusive private chef for the Hermes Family, where he traveled the world and was exposed to a multitude of culinary scenes.  This led him eventually to America and NC, where he worked for the high class establishments the Washington Duke and the  Umstead Hotels before moving on to transform City Kitchen restaurant in Chapel Hill.

 We are excited to have Tandem with us at market tomorrow!  Check them out in the gazebo from 9am-11:30am!

Gardener's Corner -   Squash Vine Borer

Some of the more challenging varieties of garden plants to grow are members of the Cucurbit family, also known as the Squashes. This includes favorites like Cucumber, Melon, Summer and Winter Squash and Pupmpkin. The far reaching vines can take up lots of space and there are plenty of pests that will find the plant and cause major damage. Be especially alert for the Squash Vine Borer which looks like a fast flying red wasp but can kill a Squash plant in short order. It only attacks hollow stem vines such as Zuccini, whereas the solid stem squash like Butternut and Pumpkin are not bothered. 
RECIPE OF THE WEEK
(From Open Door Farm)

BBT (Bacon, Basil and Tomato) Sandwich
 
I like to use goat cheese instead of mayonaise in this recipe for some extra tang.  I also use crisp cooked hog jowls instead of bacon.  Hog jowl is usually thicker cut and bit more fatty.  It's sometime easier to find a local source as well and it typically cheaper than bacon.  Top the sandwich with a fried egg if you're feeling really hungry.  

Ingredients:
1 piece ciabatta bread, split lengthwise
2-3 Tablespoons locally produced goat cheese
4 to 6 large fresh basil leaves
4 to 6 slices firm-ripe heirloom tomatoes 
Salt
Fresh-ground pepper
2 slices locally produced bacon or hog jowls 
1 fried egg (optional)

Directions:
1. Split a piece of ciabatta bread (or a crusty roll) in half lengthwise. Toast lightly. 
2. Spread cut sides generously with goat cheese. 
3. Cover bottom half with 4 to 6 large fresh basil leaves and a thick layer of 4 to 6 slices firm-ripe heirloom tomatoes. Sprinkle with salt and fresh-ground pepper to taste. Top with 2 slices crisp-cooked bacon or howl jowl. Cap with top half of ciabatta.

Tomatoes in full swing now! The crowd favorite, Cherokee Purple. In yellows we have the sweet Kellogg's Breakfast, and the high acid Azoychka. Sweet, bright and tangy Cherokee Greens. Sweet, pink German Johnsons, and the tie-dyed and fruity Striped German. Plenty of cherries to go around -  Sungolds, sweet red cherries, full-flavored black cherry, and a new favorite for oven roasting, the bi-colored blush tomates. Romas and mini-Juliets for sauce, possibly some Oxhearts too. 

Rounding things out we'll have Shishito and Padrone peppers, a few jalapenos, cucumbers, fragrant basil and cilantro, and sweet red onions! Callaloo is back, our favortie quick summer cooking green! Also our petit Italian swiss chard, perfect for a quick sautee. Summer crisp lettuce and a few bags of salad mix lettuce will be on the table early.

In the flower department: Big and beautiful Limelight Hydrangeas.  The last of the incredible Lisianthus and fragrant Oriental Lilies!  More brilliant Zinnias.  Plenty of bright Sunflowers.  Betsy's beautiful Bouquets

Chapel Hill Creamery will be at Market! 
Tomatoes are at their peak and we have the cheese to pair with them! We will have Fresh Mozzarella, Dairyland Farmers cheese, Hickory Grove, Carolina Moon, and Pheta this Saturday. We are hand stretching the Mozzarella and supply is limited. Pair our soft and flavorful version with tomatoes and basil for a Caprese salad. The Dairyland Farmers is also a fresh, unaged cheese that is moist and a little tart; perfect for lighter meals in the summer. Use it on a tomato sandwich, in our bean and corn salad recipe, as a snack with hot pepper jelly, or add to tacos with our Chorizo sausage.
   All our cheese comes from the milk of our Animal Welfare Approved cows, and since they are Jersey cows, we have rich, delicious milk to use for flavorful cheeses. Carolina Moon highlights that rich flavor as it is similar to a Camembert and softens as it ages, or ripens. Hickory Grove Cheese is our own recipe and has a luscious texture at room temperature and is fabulous for melting in an omelet, or grilled cheese sandwich. Pheta is aged in a salt brine and adds flavor to any salad.  
   Time to grill! Try our spare ribs and sausages. Choose from Mild Italian, Hot Italian, Polish, Bratwurst, Chorizo, and Mild Country Breakfast. We also have bacon and ground pork. Our pork comes from our whey fed pigs, sausages are made with the hams for a meaty taste, and we've chosen the spice mixes we think you'll enjoy. Pick up one of our recipes and choose some meat or cheese for some great summer meals.

"YOU SAY TOMATO, WE SAY POTATO..."  Yes, we know that  Saturday is Tomato Day, but we want to make sure everyone remembers the vegetable that ranks highest in the rate of consumption in the U.S. - the potato!   We will have 6 varieties for you to try.  We would love to get your feedback about your favorites.  Your comments will help us decide which ones to grow again next year. 

We will have coolers full of frozen chicken; there will be plenty of whole birds and all of your favorite cuts.  These birds are raised on pasture so they get plenty of exercise which means they develop great flavor.  They get moved every day to ensure fresh forage and a clean environment.  If you haven't tried one of Michael's Freedom Ranger chickens you don't know what you are missing.

Cingh Neam and her family are excited to be at the Carrboro Farmers' Market this winter! Cingh Neam is a Chin refugee from Burma. This is her first year farming in the winter because seasons in North Carolina are different than in Burma. Cingh Neam is a farmer at Transplanting Traditions Community Farm, a non-profit educational farm for refugees, located on Jones Ferry Road. She is thankful to have the opportunity to continue her agricultural traditions and pursue her dreams of becoming a full-time farmer.
 
This Saturday, Mu Tar K'Paw Gardens will bring a variety of beautiful and delicious greens, radishes, turnips, Asian vegetables (swiss chard, mustard greens, tatsoi), and eggs from healthy, free-range chickens. Cingh Neam, her husband, Maung Pau, and son, Thawng, are more than happy to answer any questions and about their organic growing practices or offer recipe suggestions.
