CARVER ROAD HOSPITALITY ANNOUNCES CHEF DANIEL ONTIVEROS AND GIANNI TOFFANELLO AS EXECUTIVE CHEF AND GENERAL MANAGER OF CARVERSTEAK AT RESORTS WORLD LAS VEGAS
Acclaimed duo will help bring luxury steakhouse experience to Las Vegas Strip
in December 2021

LAS VEGAS (July 27, 2021) – Carver Road Hospitality, an investor, developer, operator and marketer of top-tier hospitality concepts, has appointed Daniel Ontiveros and Gianni Toffanello to serve as executive chef and general manager, respectively, of Carversteak, the luxury steakhouse coming to Resorts World Las Vegas this December.
 
The duo brings nearly 50 years of combined experience to their new roles, supporting Carver Road Hospitality’s mission to appoint visionary leaders to helm the company’s first Las Vegas restaurant concept.
 
Chef Ontiveros brings his culinary talents to Carversteak after previously serving as executive chef at Scotch 80 Prime and T-Bones Chophouse. A graduate of Le Cordon Bleu, Chef Ontiveros has served at multiple Michelin Star-rated restaurants under globally-renowned chefs including David Myers, Michael Mina, Thomas Keller and “Chef of the Century” Joël Robuchon.
 
Toffanello is widely recognized for his 13 years as general manager of CUT by Wolfgang Puck in Las Vegas. Under Toffanello’s stewardship, the restaurant was awarded AAA Four Diamond status five times, earned eight Forbes Travel Guide Four Star awards (including annual recognition from 2013-19), and received “Top 10 Steakhouses” honors from Gayot. Toffanello has also served as general manager of Chef Paul Bartolotta’s Bartolotta Ristorante Di Mare in Las Vegas and Spiaggia in Chicago, as well as Bëistro Molokini at Maui’s Grand Wailea Resort.
 
At Carversteak, the duo will evolve the steakhouse experience beyond the expectations of both seasoned and novice steak lovers. Carver Road Hospitality has also partnered with acclaimed restaurant management group A Perfect Bite and its founder, Oliver Wharton, to oversee front and back-of-house operations at Carversteak.

Designed by award-winning international design studio DesignAgency, Carversteak will bring a mid-century modern aesthetic, with a rich palette inspired by the landscape of Las Vegas, to the newly opened Resorts World Las Vegas. The 14,500-square-foot restaurant will be highlighted by an expansive 70-foot honed quartzite stone bar, 3,500-square-foot terrace, a pair of exquisite original experiences – The Knife Shop and Scotch Room, both of which double as private dining rooms – and a dining room adorned with rotating digital and traditional art pieces.
