WILD COPPER RIVER SOCKEYE SALMON

We received our first wild shipment of the season last Friday and have brought in two shipments since! We have not seen any Copper River Kings yet, however the quality of sockeyes have been outstanding. Arriving directly from Anchorage, Alaska, our Sockeye have a bright red flesh with full flavor and excellent fat content. Fillets are extremely rich and moist in flavor, and can be prepared in a variety of ways. When cooked, the meat remains red in color and firm in texture.

- Cooler weekend weather slowed the softshell crab shed right during the peak of production. We will have to see how things play out this weekend. We were nearing the end of the first phase of shedding and its always an uncertainty how availability will be after they start the second phase.
- Farmed salmon prices seem to be stabilizing which is good news. Some pricing could start coming down.
- Oysters supplies are being squeezed due to lack of normal seed planting operations last year. Most oyster farms didn’t have the money to purchase seedstock. This will lead to a shortage of larger select 3.5-4 oysters and larger that could last well into 20022.
