Weekly Seafood Market Update: | |
- Troll season is now open in WA, AK and Canada allowing the price to drop. We have beautiful product in from California right now, as well as limited sockeye in house.
- Demand has somewhat slowed for both the Canadian and European Atlantic Salmon market which means prices are expected to fall. Chilean Salmon seems to remain consistent with limited supply and increasing demand.
- Limited Yellow Perch in house, and we are hoping for availability on walleye later this week.
- Black Bass is available, and now that Rhode Island is back open, prices should start to fall.
- Striped bass supplies should improve as we move into the fall season.
- Swordfish is consistently available, and at a great price! This remains a great menu option and should continue through October.
- Mahi availability has been limited and will remain until at least October when Mahi fishing starts in Central and South America.
- Icelandic fishing is starting to get back into the routine as boats are heading back out and new quotas coming out this week.
- Pasteurized crabmeat quantities from Indonesia are slowly starting to improve, however they are still very limited. We are expecting to see noticeable relief in September. Both China and Columbia production remains poor.
- Fresh domestic crabmeat production is finally starting to improve as demand is slowing.
- Domestic shrimp production has been great.
- The squid market will continue to see increasing prices. Inventories are scarce, and the demand is high.
- CLAMBAKE season is right around the corner! Now is the time to start thinking about a bake for your restaurant.

MONTASIO
Semi-Soft | Cows Milk | DOP Italy
Montasio DOP is a creamy, unpasteurized cow’s milk cheese originating from the Friuli Venezia Giulia and Veneto provinces of Italy. Made in large wheels, the flavor of this cheese is nutty, and slightly fruity. Since the mountain milk from which it is made is high in butterfat, the cheese has a richer flavor with hints of butterscotch. While this is an excellent cheese to consume on its own, it can also be used as an ingredient in different types of stuffed pasta, gnocchi, meat, etc.
