Weekly Seafood Market Update:

  • The Atlantic Salmon market seems to be improving with prices lowering, and good supply from both Canada and Europe. The Chilean supply still continues to struggle however.
  • Sword remains an excellent menu option with both strong landings and falling prices.
  • Mahi prices remain high, and supplies are limited. Expect shortages in the near future.
  • Prices remain firm for tuna, however more fish were available this week than last.
  • Grouper catch may start to decrease as less fishermen will be targeting them in Mexico. We will most likely see a price increase through September.
  • Black Bass pricing is starting to increase now that Rhode Island has closed.
  • The Icelandic updates remains the same- Expect to see summer pricing (as with every year at this time) due to fishermen waiting on quotas, and summer shutdowns.
  • Pricing, quality and supply all remain consistent for east coast oysters, however the west coast oysters are showing very limited supply. We expect this to continue through the foreseeable future.
  • No relief on lobster pricing- supply is limited, demand is high.
  • Soft Shell crab prices are strong. Frozen inventories are limited.
  • Pasteurized crabmeat continues to be limited. Higher volumes are expected within the next couple of months.

Prized for its superior flavor, Sturgeon is a long-lived prehistoric favorite that quickly became over fished and nearly impossible to obtain (and still is to this day.) Now farmed to perfection, the aquaculture industry has created an excellent alternative and lessened the impact on the threatened wild species.


Our sturgeon is raised in northern California and rated as Best Choice from the Monterey Bay Aquarium Seafood Watch Program. Sturgeon has a delicate, mild flavor and a lean flesh that is firm and meaty. Grilling, roasting, sautéing, smoking or poaching are all great options for preparations, and marinades work extremely well for this fish!

While the price for USDA Prime beef remains at all time highs due to a combination of factors, we are enjoying a return to normalcy regarding meat pricing in general.


Increased demand, drought conditions in the Western half of the U.S. and corn priced over $8 a bushel all add to what is seasonally a lean time in the supply of USDA Prime beef. Supplies are expected to increase lending hope to price relief with the onset of cooler temperatures in early Fall.


USDA Choice beef and domestic pork however has seen substantial price reductions recently. The supply side is good, and plants can extend operations as workers slowly return to the workplace in the fabrication of further processed meat products sold both in the retail and foodservice sectors. This relief could not come soon enough for restaurant operators and grocery store shoppers as this brings us one step closer to pre-pandemic market conditions.
