Weekly Seafood Market Update:

FINFISH:

  • New week, same story...Salmon demand and prices continues to increase. The hope is that the prices will start to fall once the wild salmon season gets going. We are expecting to see better supply and prices in the 3rd quarter when stocks have grown to marketable size. 
  • Wild Salmon- Copper River is expected to open on Monday which means we could see product here as early as the following Thursday. 
  • Grouper supplies are improving, snapper supplies remain an issue due to logistics. 
  • Supplies on local lake fish have been good. Walleye supplies are in great shape, and yellow perch is available.
  • Mahi prices are up due to the end of the season. 
  • Halibut prices have lowered due to the increasing amount of fish available on the market. Pricing is predicted to be more favorable moving forward. 
  • Barramundi is available, and product is beautiful! 
  • Better landings this week in Iceland now that the spawning period has finished up. 
  • Flounder prices are reasonable with many new openings. 
  • Monkfish landings were low, and prices are spiking.
  • Black Bass landings have been good creating stable prices. 
  • Redfish supplies are limited and on allocation.


SHELLFISH:

  • Stone Crab season is closing early next week, creating limited availability for Mothers' Day.
  • While it is still very early in the season, Softshells remain limited and extremely expensive. We expect availability to increase and prices to fall over the next 14 days. 
  • Fresh Maryland Crab season is off to a slow start keeping prices high. Pasteurized Blue Swimming Crab prices continue to fall minimally.
  • The well continues to get lower on Oyster selection and as indicated earlier it’s not going away anytime soon. Suppliers that normally carry 50 different variations of oysters have nothing. Our farms are doing the best they can in shipping product. Pacific Oysters started back in house on Tuesday. The shortage was caused by some Canadian product that was causing illnesses a couple weeks ago…the issue turned into an import ban which interrupted commerce.
  • Mussel spawning season is around the corner. 


FROZEN:

  • Domestic, frozen shrimp- white and brown selections remain short, prices remain firm.
  • Chilean SeaBass supply is tight.
  • Loligo/ Todarodes Squid prices increased this week due to material and labor.
  • Fisherman are out for Canadian Snow Crab and they are expecting a decent catch. In addition, the quota was raised so we are hoping to see prices fall. 
  • Canadian lobster tail prices are holding steady but supplies are available!

KOKOBORREGO MORROW

Sheep's Milk | Aged 3-8 weeks | USA-OH


Morrow is a lactic style sheep milk cheese that is dusted with ash and has a lightly bloomy rind. It's produced seasonally between April and August, so now is the time to get it! It is soft, rich and has fruity and sweet undertones balanced with more savory notes of garlic and that characteristic sheep milk grassiness.

GERMAIN LE PICO GOAT CHEESE

Product of France


Le Pico Germain is a true cheese from the French terroirs, made from goat’s milk. Under its slightly downy rind hides a center which evolves with maturing. Le Pico is mild, with a creamy surface and a firm, melty center. Le Pico has a mild, authentic and slightly characteristic flavor. This goat cheese is very flavorful and very aromatic, with hazelnut notes.
