INGREDIENTS
2 large summer squash
1 onion
10 small peppers sliced
3 Tbls Olive Oil
2 cloves garlic, minced
2 Tbls chopped fresh herbs
Salt & Pepper to Taste
PREPARATION
1) Slice vegetables thin.
2) Add olive oil, garlic and herbs and toss well.
3) Cook on a sheet pan in a 375 degree oven for 20 minutes or until desired doneness.
4) Top with shaved parmesan
5) Serve with cold craft beer.
Note: This dish can be prepared on the stovetop in a cast iron pan or on the grill.
