Potato Soup with Winter Greens Garnish

Serves 2
Ingredients:
1 lb potatoes, peeled and cut in half
4 cups chicken stock
2 tbsp olive oil
generous pinch of sea salt
Method:
Over medium heat cook the potatoes and the stock. Simmer until the potatoes start to fall apart. Blend soup in a vitamix or blender until smooth.
If using a conventional blender or vitamix, cover the top with a rag. Do not allow the steam pressure to push it off – hold firm.
Herb Oil Garnish Ingredients:
1 Clove garlic
1½ cup spinach, chopped
1/3 cup olive oil
Pinch sea salt
Method:
Sauté spinach in some olive oil and salt. Blend all ingredients together until smooth.
