Chef Melissa Miranda
Musang (Filipinx restaurant, Beacon Hill, Seattle) Chef Melissa Miranda taught multiple HCEF classes at Leeward Community College and Kauai Community College. Chef Miranda is a James Beard 2022 and 2023 semi-finalist.

Chef Miranda shared her Filipino culture, passion and pride. She joined the students in preparing Inaloban Sauce (coconut milk, turmeric, lemongrass, ginger) served over fish on banana leaves. In sharing Arroz Valencia, Miranda offered a historical perspective and a geography lesson. The students loved the Sarciado sauce (tomato/garlic-based sauce with egg ribbons dispersed throughout) served over fried Hamachi collars.

Chef Isabel Chung
Fairmont Orchid Executive Chef Isabel Chung taught a HCEF Dim Sum workshop at Palamanui / West Hawaii. She demonstrated Hamakua Mushroom Spring Rolls, Pan Fried Gyoza, and Shrimp Siu Mai.

Chef Chung oversees all creative and strategic initiatives of Fairmont Orchid’s culinary operations, including the fine dining, AAA Four Diamond restaurant, Brown’s Beach House.

Chung is among an elite circle of female chefs holding the title of executive chef at Fairmont properties worldwide. She most recently was the Executive Chef at the Fairmont Chateau Whistler.


Chung studied Culinary Arts at the Southern Alberta Institute of Technology in Calgary, Alberta. She also studied Commerce at Athabasca University in Calgary, Alberta. 

Dim Sum Workshop

Chef Isabel Chung presented an exceptional dim sum class for our students. Her detailed explanations, skill, and way she speaks with a smile, created a wonderful atmosphere. This was one of the best cooking classes I have attended. Palamanui Chef Instructor Paul Heerlein

Absolutely, the chef is super hands on.

We were able to learn three traditional Chinese dim sum recipes with detailed techniques while asking questions of someone in the industry.
