Here at the farm we have been surviving by reinforcing/adhering to our systems. This has even extended to the household, I am reminded of a PA Dutch song I know that describes all the chores for each day of the week- if we deviate from the plan, chaos ensues! So my dinner routine has become somewhat fixed for the first time in my culinary life....

As many of you know, mushrooms can be a fabulous meat substitute. I use this to my advantage every single day! We do eat meat, but try to limit it to meat we can trade for with other vendors at markets, and even then, we try to go light. So Meatless Mondays have become a thing in our house. This past week we were all very very happy with my stuffed portabellos:

Cheesey Stuffed Mushrooms (serves 4)
8 portobello caps, destemmed and cleaned
2 cups cooked rice
1 cup breadcrumbs
10 oz feta, paneer, breadcheese or something like that- cut into 1/2 inch cubes
2 eggs
2 cloves garlic

Pre-heat oven to 350 deg F
Lay portobello caps out on a sheet pan.
Drizzle olive oil and grind a bit of salt over them.
In a medium sized mixing bowl, combine all other ingredients.
Fill each cap with mixture.
Bake for 35 minutes

A simple variation is to substitute shiitake caps (32 caps in that case) or crimini caps for a smaller bite/appetizer dish. Simple but wonderful! Enjoy!

Blossoms you can eat!
Phillips Farms' zucchini is loving these warm temperatures! Also available Saturday will be squash blossoms - perfect for stuffing or frying. For a quick and refreshing summer appetizer, stuff zucchini blossoms with a soft cheese like fromage blanc from Haven Farmstead Table, add a sprinkling of sea salt & fresh herbs - delicious!

Strawberries are beginning to wind down for the season, while raspberries are in good supply. Also this week: spring garlic, garlic scapes, shelling peas, peas already shelled, sugar snap peas, rhubarb, radishes, greenhouse tomatoes, beets, leeks, carrots, cauliflower, arugula, mizuna, lettuce, kale, swiss chard, bok choy, fresh herbs and so much more.  Can you keep a secret? Early shoppers may find some fresh picked blueberries too.

Holy Cow Farm has a great selection of bouquets this week. All bouquets will include a bit of feverfew, an early summer treat with a nice herbal scent. Other highlights include the first zinnias of the year, royal sunset lilies, and refreshing mountain mint. Don't forget to pre-order on their website to be sure you get your weekly blooms!

Cabbage Throw Farm
First cucumbers
This week will be the last chance to pre-order a Cabbage Throw Farm Grab Bag online. But do not fret, Grab Bags, Salad Lovers' Bags and more will still be available for purchase at market. This season's first cucumbers and fresh onions along with a head of lettuce, Napa cabbage, and purple top turnips will be in the Grab Bag this week. 
In even more exciting news, field tomatoes should be ripening up within the next few weeks, garlic is being harvested, green beans will soon be flowering, and fall plantings are underway. Comeback Orchards
Organic berries
Organic strawberry season is winding down, but Comeback Orchards is still picking the late season berries. Malwina, a new strawberry with excellent flavor is producing well, but quantities will be limited. They're also picking a few berries from the recently planted A.C. Valley Sunet strawberry plants, a recent introduction from Nova Scotia. 

The first raspberries of the season will be available this week. Organic salsa in three heat categories, organic ketchup, organic applesauce and organic fruit butters will also be on the table.

This week the lineup grows a little more! Salvaterra's will have lettuce mix, arugula, red and green head lettuce, romaine, kale, collards, Swiss chard, green cabbage, Napa cabbage, fennel, parsley, dill, cilantro, carrots, radishes, scallions, beets, and slicing tomatoes. Tomatoes are in abundance in the greenhouse! And new this week are basil and mint.

New this week at Scholl's are sweet cherries and tomatoes from the high tunnel!

Ben just pressed their last batch of apple cider until the fall - so supplies may be limited. The Scholl Team will also be bringing EverCrisp and Pink Lady apples along with veggies and their lineup of jarred products.

Since Larry Holmes Drive is closed to traffic during the market hours, you'll need to access the parking lots at Ferry & Second Streets (turn right off of Ferry St., just past the US Post Office), or via Green and Northampton Streets (turn at the Grand Eastonian Hotel). Signs are posted.

FREE parking is also available in the City's Pine Street Garage.
