Recipe of the Week: Flourless Chickpea Brownies
|
Chickpea brownies, you say? Yup! And they are DELICIOUS!!!!
Ingredients:
- 1 (15-oz.) can chickpeas (garbanzo beans), drained, rinsed
- ¼ cup coconut oil, melted
- 2 flax or chia eggs *
- ½ cup pure maple syrup
- 2 tsp. pure vanilla extract
- 1⁄3 cup unsweetened cacao powder
- ½ tsp. baking powder, gluten-free
- ¼ cup semisweet (or dark) chocolate chips
Directions:
- Preheat oven to 350° F
- Prepare 9 x 9 -inch baking pan
- Place chickpeas, oil, "eggs," maple syrup, vanilla extract, cacao powder, baking powder, and salt in blender (or food processor); cover
- Blend until smooth
- Add chocolate chips; mix by hand until blended
- Evenly spread batter into prepared pan
- Bake for 25 to 28 minutes, or until a toothpick inserted into the center of brownies comes out clean
- Cut into squares
* Note: to make a flax or chia egg, simply mix one tbsp chia seeds or ground flax seed with three tbsp of water; mix; let sit at least 10 minutes.

Ingredient Spotlight: Chickpeas
Chickpeas have been utilized in certain cultures for thousands of years, and their nutritional benefits are impressive! Here are some highlights....
- low in calories, but high in nutrients
- the fiber and protein in chickpeas may help prevent overeating
- an excellent source of both plant-based protein and complex carbohydrates
- low on the glycemic index; may help to keep your blood sugar level steady
- high in soluble fiber, which improves gut health
- may help protect against diseases such as diabetes and heart disease
- incredibly inexpensive

Instead of one exercise, I'm bringing you an entire segment to tone the booty, core, and stabilizing muscles! These exercises are derived from Pilates and work everything from the core down.

Mindset Spotlight: Affirmations
|
Say it, say it, DO IT!!!
This goes for everything in life. In order to create lasting change, we must constantly affirm that which we want.
Affirmations, while they sometimes seem cheesy, are incredibly effective! I have a friend who looks at herself in the mirror every morning and tells herself out loud everything she loves about herself and everything she plans to accomplish for the day as if it is already so. Might sound funky, but she's one of the happiest, most successful people I know! What do we have to lose, right? Who's with me?!!!!

Product of the Week: The Lacrosse Ball
|
Research indicates that many physical issues stem, originally, from the feet. One cause is excess tension in the feet. Often this is the result of wearing high heels or unsupportive shoes. Rolling your feet with a lacrosse ball can help! Tennis balls and racquetballs work, too, but they are squishier and not quite as effective. You can find a lacrosse ball at your local sporting goods store or online.

As a certified holistic health coach, one thing stands out among my clients...many aren't eating enough or aren't eating in proper balance!

To all my fitness professional friends....
