Hello Dear Reader:
The United States welcomes back the Copa América tournament! The event takes place in 10 states and 14 stadiums, with California hosting at Levy’s Stadium in Santa Clara and SoFi Stadium in Inglewood.
In 2016, the Copa commemorated its centennial in the United States. I produced events at the now-closed Slate Bar, where the euphoria escalated with every match as Chile grew closer to becoming the champs. I'm including a YouTube video of the triumphant moment that shook Slate Bar, captured by my longtime customer Mauricio Gil.
This time around, I am partnering with Marco Senghor, the owner of Bissap Baobab; the renowned Senegalese restaurant where we gather to watch the World Cup. Baobab is definitely the go-to spot to watch soccer. I’ll be offering Chile Lindo empanadas, of course.
Back in 2016, I came up with a new empanada for la Copa. The recipe for Goooool al Merkén. Take a look at the label below, and you’ll notice that its design pays homage to the soccer jersey of Chile’s team, also known as la Roja. The label also features details, such as dates, 1916 to 2016, marking la Copa’s 100th anniversary.
In a nod to Chilean fútbol and culinary traditions, I infused my Copa América recipe with Merkén, a Mapuche spice from la Araucanía. Merkén is a mild, smoky spice made with ají cacho de cabra, ground coriander seeds, and sea salt. I source mine from Isabel Levio Curiqueo, a Mapuche woman that lives and works at an indigenous community in Southern Chile called Ranquilco Alto. Isabel’s brand is Kellü-Milla. Hers is the best!
