As you have probably heard, Pennsylvania is entering a new phase of COVID restrictions that go into effect on Saturday. Please know that the Easton Farmers' Market will remain in operation as an essential business, maintaining all the same safety precautions that we have had in place throughout the 2020 season. In light of the Governor's orders we will eliminate the holiday market fireplaces as they encourage unnecessary gathering.

As we enter what we hope is the homestretch of the pandemic, we ask that you remain diligent: stay home if you aren't feeling well, wash your hands, wear your mask, sanitize your hands between purchases, and maintain social distance. And remember, it's never been more important to eat healthfully. Consuming plenty of fresh fruits and vegetables is such a crucial part of maintaining your immune system. And even though it's mid-December, there is still an abundance of locally grown produce available - thanks to our hard working farmers. Come feed your body - and your soul. And be sure to check out all our special holiday gift offerings. As we've been saying for the past 7 months, we hope the market can bring a little bit of joy and normalcy to your week. Be well.

Cabbage Throw Farm
The season continues even as the winds get colder. Purple kohlrabi and lots of roots including watermelon radish, red radish, black radish, hakurei turnips, and purple top turnips. Sautéing greens include bunches of Tatsoi, Bok choy, kale, gold ball turnips, and flowering broccoli. Napa Cabbage, winter greens mix, spring mix, lettuce, herbs, dandelion greens, and various microgreens will round out the tables this weekend at the Cabbage Throw Farm tent.
Scholl Orchards
Immune boosters! Cruciferous veggies like cauliflower, broccoli and cabbage are loaded with antioxidants and great for crunchy slaws and salads, or for roasting in the oven. You'll also find lots of winter squash, and potatoes and onions for hearty winter soups and stews. This is great weather for baking, or simmering a big pot of mulled cider. Scholl's has apples for every taste - Winesap for those that wanna go old school or Evercrisp, Ludacrisp and Rosalee for those who like the latest and the greatest. The pears are delicious this season and perfect when tossed in a arugula salad with some cheese from Haven Farmstead and a honey dressing. And don't forget all Scholl's jarred products and holiday gift sets! Have you trued their new salsa??
Salvaterra's Gardens
Matt will have a rainbow of veggies on the table again this week. Choose from lettuce mix, spinach, arugula, baby kale mix, spicy winter mix, green and Tuscan kale, collards, rainbow chard, Bok choy, Hakurei turnips, carrots, radishes, leeks, spaghetti squash, fennel, parsley, green, red, and Nappa cabbage.

Stephen and Keith will have a bounty of summer crisp and butterhead lettuce for big healthy salads. And loads of sunflower microgreens, green radish microgreens, and pea shoot microgreens. These superfood microgreens are a fast and easy way to amp up your nutrition intake on busy days. They're perfect for pilling onto sandwiches, bagels and cream cheese, burgers, salads, eggs and more!
Primordia Mushrooms
Here's one of Primordia's favorite go-to mushroom recipes...

Jesse's Mushroom Tart

4 tbs butter
2 lb mixed mushrooms (shiitake, maitake, oyster, and pioppino would be my pick) chopped
1 tsp Thyme
1 tsp salt
1tsp sage
2 cloves garlic, minced
1 8 oz block cream cheese or creamy feta, cubed
2 eggs
Pie crust of your choice

Set the oven to 350 deg

In a large skillet, melt the butter and sauté the mushrooms till they start to brown

Add thyme, sage, salt, and garlic and mix well. Sauté an additional few minutes till flavors are well blended.

Remove from heat.

In a separate bowl, beat eggs and add in cubed cheese. When the mixture is smooth, add mushrooms and mix till evenly blended.

Press pie crust into a 9” pie tin. Add
Mushroom/cheese mixture.

Bake for 40 minutes, remove and let rest for 5 minutes before serving.

Cannoli cream cruffins and peppermint cream cruffins are on the menu this week at the Flourshop, along with red velvet cream cheese roll, gingerbread friends, and new, super yummy pecan scones made with local maple sugar!
For the penultimate market in the year that will not end, Lisa and Anne have brought some seasonal goodies to bring a bit of joy. There's something for dinner: Moroccan Chicken Pot Pies, Vegetable and White Bean Pie, or Quiche with Spinach, Artichoke, and Feta or Quiche Lorraine, rich with bacon, leeks, and Cheddar cheese.

For sweets, enjoy a Mint Chocolate Pie, Apple Galette with Cider Caramel, or Pear Cranberry Pie.

The Bubbly Goat
Last night I had the pleasure of visiting The Bubbly Goat. It was wonderful to meet and play with the goats and see the love that Barbara and her daughter Joy have for their merry (and mischievous) little herd. Two of the goats are pregnant, one is expecting triplets in February! I watched as Joy milked a goat and one of the resident farm cats got to enjoy the result - a bowl of creamy warm milk on a cold December night. Stop by tomorrow and treat yourself to some skin loving goat milk products, just in time for colder weather. Goat's milk soaps, lotions and candles make great gifts and stocking stuffers!

MayaMam Weavers
MayaMam creates handwoven home goods and accessories inspired by the rich colors and patterns and traditional weaving techniques of Mayan culture. MayaMam began in 2008 as a cooperative of women in Cajolá, a Mayan town in the western highlands of Guatemala. To overcome poverty, the women came together to explore ways to provide jobs within their community, rather than migrate to the U.S. and separate their families. Since then, then the cooperative has grown to 20 weavers and seamstresses, all earning fair trade wages while learning the skills to run a business. It also provides on-site childcare and adult literacy classes for the community. Mayamam Weavers in the U.S. is based in Morristown, NJ. They are proud members of the Fair Trade Federation, and proud to offer products that make a difference in the lives of women and provide a better future for their children.
