Quinoa Fruit and Nut Breakfast - "Shaw's recipe"
This recipe is from a customer and I made it this snowy morning. It is warm with cinnamon and blood orange olive oil; I would consider it a spiced quinoa salad that you could have for breakfast or to help soothe a sweet tooth.
You can use another oil if your not into the blood orange olive oil and prefer another flavor.

Quinoa Fruit and Nut Breakfast
Make your Quinoa per the package directions

  • 1/2 cup dry quinoa and 1 cup water

Make the fruit and nut mixture in a small pot. Heat the pot and add the blood orange olive oil for a warm orange flavor.
Add the other ingredients (below) and toss to coat and soften; maybe 5 - 10 minutes. Your house will smell really good. During the cooking process you will need to add more blood orange to keep ingredients moist and to add it to the quinoa after it cooks.
  • Blood orange olive oil
  • Skin and chop a apple
  • Chopped walnuts - a handful
  • Craisins: about 2- 3 Tablespoons
  • Cinnamon
  • Maple Syrup
  • A small amount of salt to fruit and nut mixture while cooking

You can mix it into the quinoa or toss it together. I added some more maple syrup to taste.




Blood Orange Olive Oil
This is a versatile flavor as you can use it on the recipe above, banana bread, make a salad dressing with fig balsamic vinegar, drizzle it on carrots or squash or even baked sweet potato fries or chicken.

Maple syrup has many uses but pancakes, sweet potato fry dip and the recipe above come to mind.
