Swiss Turkey Enchiladas
8 corn tortillas
2 3/4 c. green salsa (salsa verde)
1/2 c. sour cream
1/2 c. fresh cilantro
8 oz. cooked turkey breast, diced
1 jar roasted red peppers, drained
6 oz. Swiss cheese
Diced tomato and sliced green onion, for serving
1. Place tortilla stack in the oven and heat oven to 425F.
2. Combine the salsa, sour cream and cilantro in a medium bowl. Spread 1/2 cup of mixture on the bottom of a greased 2 quart baking dish.
3. In another bowl, combine the turkey, peppers and 1 cup of cheese. Remove tortillas from oven. Divide turkey mixture among the tortillas. Roll up and place seam-side down in the baking dish. Top with remaining salsa mixture.
4. Cover with nonstick foil and bake for 15 minutes. Uncover, sprinkle with remaining cheese and bake until cheese melts, 8-10 minutes.
