Welcome to the December Newsletter!

Nearing the eve of the new year, and as the doors close to 2023, we wait in anticipation for 2024. For many of us, 2023 brought some wonderful things along with some trials, as is expected in life. We may have lost loved ones along the way or had to face illness. The world is certainly not the same one we met in 2023. We pray that peace and harmony prevail in this troubled world that we live in.
We hope that your Christmas was beautiful and bright! Did you try your hand at the black fruit cake recipe we posted last month? Did you dance one of those nice Christmas soul songs with that special someone?
If you haven’t, it’s not too late. Christmas lights, music, food etc. are still on until January 6th when we celebrate the day of the Three Kings. This brings me to reveal this edition’s new “Star of Eternity”, the Baby Jesus, whose birth we celebrate on December 25th. He was born in a humble stable under the brightest star of Bethlehem to bring hope and unconditional love to us for all of eternity.
Not everyone was taking a break this December. Prime Minister the Honorable John Briceño was engaged in the work of the nation, including playing a pivotal role in advocating for the reacquisition of the Port of Belize for national prosperity and development.
And to help spread some Christmas cheer, PM Briceno organized a Christmas luncheon for the Belize Defense Force as an appreciation for their continued service.
In his hometown of Orange Walk, the PM participated in the opening of Cellular World. He described the achievement as an expression of confidence in the business climate and the market for digital tools and devices. The PM thanked its investors for the opportunity to officially welcome them to our Town and District.

It has been my distinct honor to serve under the tenure of the Honorable Eamon Courtenay, Minister of Foreign Affairs, Immigration and Foreign Trade, who completed his three-year term this month.
Minister Courtenay played a pivotal role in the development of Belize’s foreign policy solidifying Belize’s position and policies in the international arena. Of great importance to the missions and consulates abroad, is the installation of the new E-Pics system that allows the diaspora to be proud holders of a Belizean passport that is far more advanced because of the technology invested in the system. We wish Minister Courtenay the very best as he embarks on new endeavors.
We also take the opportunity to welcome the Honorable Francis Fonseca, Minister of Education, Culture, Science and Technology who will now be the new Foreign Minister and we look forward to working with him in achieving his goals and endeavors.
Of great relevance to Belize and the region, is the recent escalation of the Guyana-Venezuela border dispute. The CARICOM Heads of Government met on December 8th and issued a statement reiterating that it “firmly supports Guyana in pursuance of the resolution of its border controversy with Venezuela through the process of the ICJ.”
In the bustling world of Belize's government, numerous Ministries have been actively working to propel the nation forward this month.
The Ministry of Education, Culture, Science, and Technology, in collaboration with various partners and allies, proudly announced the establishment of the Belize Culture Fund. This fund intends to fortify the country's cultural identity and foster innovation in these key sectors.
The Ministry of the Public Service, Constitutional and Political Reform, and Religious Affairs, on behalf of the Belize government, committed to a Statement of Agreement with the Church Communities of Belize. The signed document is a testament to the government's dedication to fostering a collaborative relationship with religious entities for the betterment of society.
In a significant stride towards enhanced infrastructure and improved housing, the Ministry of Infrastructure Development and Housing, celebrated the handover of keys to six families. This gesture not only symbolizes the provision of secure housing but also marks a step towards a brighter future for these families.
The Ministry of Tourism and Diaspora Relations, alongside the Belize Tourism Board, concluded a productive session with the World Bank. The dialogue aimed to explore avenues for bolstering Belize's tourism sector and strengthening its diaspora relations.
Lastly, the Ministry of Home Affairs and New Growth Industries joined forces with UNDP to implement the PACE Justice Programme. This initiative reflects the collaborative efforts between the government and international organizations to promote justice and new growth industries for a more prosperous Belize.

The celebration continues with food! Because of the diversity of Belizean culture, there are many different delicacies to enjoy during Christmas and leading up to New Years.
This month, we've decided to highlight “Bollos," or tamales, which are a part of our Mayan heritage. The tamal is made with a "tortilla" base of corn masa for the tamal filled with a mixture of pork and or chicken that have been well-seasoned in authentic Mayan spices, wrapped in plantain leaves and slowly boiled. It's crowning glory is when its topped with kohl, a rich succulent sauce made with a mixture corn masa, chicken consommé and other spices.
For those who would prefer to pass on the traditional fruit cake, a beloved sweet delicacy handed down from our British ancestry, the white cake (aka yellow or vanilla cake), is made with fresh eggs and butter, with added flavorings such as vanilla, almond essence and rum. It becomes distinctively Belizean when pineapple and or lemon essence is incorporated instead.
This cake is also a version of the English Pound Cake. Growing up, I recall that the white cake was referred to as “lite cake” and was offered with “lemonade” (7-Up or other soda). It still is popular at parties. In our neighborhood, Dits was our go to place for sweet Belizean treats.

Dear Members of the Belizean Diaspora,
As the year draws to a close, I take this moment to extend heartfelt greetings to each and every one of you, the vibrant Belizean community living here in the United States. This year, like those before it, has presented its own unique challenges and triumphs. Through it all, your unwavering spirit and dedication to our homeland have shone brightly, a testament to the resilience and unity inherent in our Belizean identity.
Our nation's strength is amplified by your contributions, whether through cultural exchange, economic support, or the simple yet profound act of sharing our Belizean heritage with the world. Your role in fostering global networks and creating opportunities for Belize and its people is invaluable.
This year has also been a time of reflection and growth. We have seen remarkable examples of cooperation and solidarity within our community, showcasing the power of unity in overcoming challenges. Your efforts in supporting local development, whether through remittances, participating in cultural events, or engaging in dialogue about our nation's future, have been instrumental.
You may know by now that at the end of this year, Minister Eamon Courtenay will be completing his 3-year commitment as Minister of Foreign Affairs. I am compelled to take this opportunity to express our sincere gratitude to Minister Courtney who displayed exceptional leadership and acumen as Minister of Foreign Affairs.
His presence will be missed not only at the Ministry, but also in the Caribbean and Central America where is leadership in CARICOM and SICA is very much admired and appreciated. He undoubtedly helped to significantly increase our standing in both CARICOM and SICA and his efforts will redound for years to come. That said, we welcome our new Minister, Honorable Francis Fonseca. His expertise as a lawyer and a politician is among the best and we are assured of continued good stewardship in the Ministry.
As we look forward to the new year under new leadership, let us carry with us the lessons learned and the bonds strengthened. We move ahead with a shared vision for a prosperous, inclusive, and vibrant Belize, knowing that you, our global ambassadors, play a crucial role in this journey.
Let us also remember to nurture our connections with our homeland, fostering a sense of unity and shared purpose across the miles. Our heritage, culture, and collective dreams for Belize's future bind us, no matter where we find ourselves in the world.
In closing, I wish you and your loved ones a joyous holiday season and a new year filled with peace, happiness, and prosperity. May the spirit of Belize remain strong in your hearts, as you continue to be a source of pride and inspiration for us all.

The angel Gabriel was sent to a fine young woman named Mary. He told her that she would have a child who would rule as king forever. The child, Jesus, was born in a stable, where shepherds visited him. Later, a star guided men from the East to the young child. We learn who caused them to see that star, and how Jesus was saved from the efforts to kill him.
Next, we find Jesus, when he was 12 years old, talking with the teachers in the temple. Eighteen years later Jesus was baptized, and he then began the Kingdom preaching and teaching work that God sent him to earth to do. To help him in this work, Jesus chose 12 men and made them his apostles.
Jesus also did many miracles. He fed thousands of people with only a few small fishes and a few loaves of bread. He healed the sick and even raised the dead. Finally, we learn about the many things that happened to Jesus during the last day of his life, and how he was killed. Jesus preached for about three and a half years, so PART 6 covers a period of a little more than 34 years. Read More

Seaweed Catalogue- Women Entrepreneurs in Belize
As the pandemic battered livelihoods, many entrepreneurs had their one source for sustenance and income stripped off. In response, BELTRAIDE with funding from the International Cooperation and Development Fund (ICDF) - Taiwan launched The Belize Female Entrepreneurship Program - Covid Relief for Women in Emerging Industries Project to support female entrepreneurs in the seaweed industry who were affected by the Covid-19 Pandemic.
The project provided much-needed guidance and knowledge in running and growing a business and seed capital grants to expand their capabilities that could lead to increased income, employment, and rebound the economy of Belize. The project nurtured the small businesses and equipped them with the necessary tools to overcome the negative effects of the pandemic.
Recognizing the tremendous progress of the seaweed entrepreneurs and their products, the BELTRAIDE team created a seaweed catalogue showcasing a diverse array of seaweed products such as skin care, body oils, beverages, health and wellness, which have been developed by talented women who use the power of the sea to nourish, sustain, and inspire.
This is a vibrant tapestry woven with the stories of passionate entrepreneurs who are transforming the ocean's bounty into sustainable success. This comprehensive catalogue is celebrating the dynamic world of Belizean seaweed.

The first lighthouse in Belize was erected at Half Moon Caye in 1820. This historical landmark finds its origins in a drawing by Thomas Pickstock, a Magistrate and merchant known for his somewhat dubious dealings. Notably, a street in Belize City bears his name. This lighthouse marked the beginning of a navigational aid system in Belize, paving the way for the establishment of other lighthouses across the country.

JetBlue launches nonstop service from
New York to Belize City
| |
In a historic move, the airline JetBlue has commenced nonstop flights from New York's John F. Kennedy International Airport (JFK) to Philip S. W. Goldson International Airport (BZE) in Belize City. This makes JetBlue the exclusive airline offering direct service on this route.
To mark the occasion, JetBlue is offering limited-time $119 one-way fares for flights between New York-JFK and Belize. The service will operate on Mondays, Wednesdays, and Saturdays, providing customers with greater flexibility and convenience.
Belize, renowned for its natural beauty and diverse ecosystems, is a strategic addition to JetBlue's growing network. The airline's commitment to expanding services in Latin America and the Caribbean is evident, with Belize City becoming its 40th international destination.
JetBlue's Airbus A320 aircraft will operate the Belize City route, providing passengers with the airline's renowned amenities, including the most legroom in coach, complimentary snacks and drinks, free broadband Fly-Fi, and seatback entertainment at every seat.

Bollo or Tamale

Ingredients:
Tamale Base
1 ½ lbs masa
¾ cups oil
Some water
Salt to taste
| |
Filling
½ tsp black pepper
¼ tsp annatto (red recado)
1 tsp chicken bouillon
1 medium onion, chopped
1 clove garlic, crushed
1 T oil
½ lb masa
1 cup water
Salt to tast
| |
Combine salt, pepper, annatto, bouillon, onion, garlic, and oil in a medium pot. Introduce masa and water into the mixture, bringing it to a boil while stirring consistently. Once it reaches the boiling point, remove from heat and set aside.
Wrap the masa around the filling, folding first one side and then the other, similar to sealing an envelope. Then, fold the banana leaf over the tamal lengthwise and at the ends. If using foil, tightly encase the tamal to seal it before steaming.
Arrange banana leaf veins at the pot's bottom. Place the tamales on the veins, add water (without fully covering the tamales), and steam for one hour.

Caramel Cake

Ingredients
- 1 cup butter
- 2 cups sugar
- 4 eggs
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 cup evaporated milk
- 2 teaspoons vanilla extract
- 1 teaspoon lemon extract
- 14 ounce can sweetened condensed milk

Preheat oven to 350°F. Grease and flour two 9" round baking pans. In a mixing bowl, beat butter and sugar until fluffy. Add eggs one at a time beating well after each one. Sift flour and baking powder and slowly add to the butter mixture, alternating with milk, vanilla and lemon extracts. Bear until well blended and creamy. Add more milk if necessary. Bake for 35 to 40 minutes. Cool completely.
For the Caramel
Remove label from condensed milk and place can on its side in a pressure cooker with enough water to cover 1 inch above can. Cover and cook on high heat. When pressure cooker starts to hiss, turn heat so medium low and cook for 25 to 30 minutes, It may also be cooked in a pan with boiling water by placing it in the pot with enough water to cover the can. Bring to a rapid boil and cook for 2 hours on medium high. Add hot water to keep can covered while cooking. Discard water and cool can completely before opening. Place one cake on serving platter and cover with caramel. Place the other on top and spread caramel on top and sides of cake.

Prime Minister Briceño's Latest Statement on the ICJ | |
On September 26, as Prime Minister Briceño addressed the Protocol Session of the (OAS), he reiterated the important role the organization has played in not only for the territorial dispute between Guatemala and Belize but in relations among all Member States.
I emphasized our hope for a peaceful solution to the Guatemala Belize matter currently at the ICJ, where Belize is allowed to maintain the integrity of all its borders.

Belize Submits Its Counter-Memorial to the ICJ Regarding the Guatemalan Claim

On June 3rd during the sitting of the House of Representatives, Prime Minister John Briceño announced that Belize delivered its counter-memorial to the Registrar of the International Court of Justice in The Hague. Belize’s counter-memorial makes a robust defense of Belize’s sovereignty over its entire territory including islands and the pertaining maritime areas under international law.
Following the timetable announced by the Court, which was amended as a result of the pandemic, Guatemala submitted its memorial on December 8, 2020, and is due to submit its reply to Belize’s counter-memorial in December 2022. Belize will then have until June 2023 to submit its rejoinder, after which the Court will set a date for the oral hearings. Briceño says that the hearing is expected to possibly be held by 2024.
