Welcome to the February Newsletter!

February, the second month of the year, in the northern hemisphere, is usually considered the last month of winter. Dictionary


The Roman month “Februarius” was named after the Latin term “februum”, which means “purification” via the purification ritual held on February 15th (full moon) in the old lunar Roman calendar. Wikipedia


While there is no documented religious link to the Latin meaning of the purification ritual, we can take the opportunity to use this time for introspection and inner transformation. For some of us it can be a painful process but like the famous Bruce Lee once said, “Pain will leave you once it’s done teaching you.” As winter wanes and new life begins, mother nature too is undergoing its own form of purification, producing its best in springtime.


Also happening as we speak, is the rare alignment of seven planets happening today, February 28, 2025. This rare occurrence is not expected again until 2040. May the stars align just as perfectly for you— Here’s to your own stellar moments ahead!


Hello everyone, we hope that your February has been fabulous! After all, it is also the month of love. Here in the U.S., we celebrated Presidents' Day. The official name continues to be “George Washington’s Day” in honor of George Washington, Father of the nation. And while it was not officially changed, the name “Presidents Day” became commonly used in 1971.


This month, we also celebrated Black History Month—a time to honor the rich heritage, accomplishments, and contributions of Black individuals throughout history. As you may know by now, we are foodies at the Consulate of Belize in Florida, so first things first. How did you celebrate Valentines Day? Was it with a nice juicy steak followed by hot lava chocolate cake or black dinnah with lemon merengue pie?


We have carefully chosen a Belizean Sunday special, (or daily) baked chicken generously seasoned with Belizean red recado (for love) . And for a little indulgence, we’ve included a lesser-known recipe: the Belizean orange tart. It’s a creamy, citrusy delight snuggled in a buttery crust – pure perfection!


And why not? Belize is famous for its citrus industry which produces oranges, grapefruit and limes bursting with flavor and richness which are enjoyed in Belize and exported around the world. The star of the show is home grown Belizean cashews, the ingredient in the tart's scrumptious filling, which is an exciting niche industry in Belize.


In Belize, excitement abounds for all Belizeans who will exercise their right to vote in March. Prime Minister John Briceño announced that Belize's general elections will take place on March 12th, a momentous day in Belize in its advancement of democracy and freedom.

The PM and his candidates seeking to be elected, have been traversing the country meeting with the people of Belize, listening to their concerns and sharing with them the exciting Plan Belize 2.0.


As you may know, H.E. Mrs. Rossana Briceño, Spouse of the Prime Minister and Special Envoy for the Development of Families and Children, is hosting the Pink Soirée on March 1st, a special fundraising event to support cancer research and treatment. In just a few days the event will be held. If you haven’t yet, please take a moment to check the details in this newsletter and consider contributing to this meaningful cause.


Cancer has become a major health concern in Belize, with it now being the second leading cause of death in the country. In 2022 alone, there were 409 new cancer cases and 211 deaths. This highlights the urgency of supporting cancer research and treatment programs. Please consider making a difference as we work together to fight this growing health challenge. Let’s show our support for those who are bravely battling this devastating disease.


On the international stage, Belize’s delegation, led by H.E. Amalia Mai, CEO of the Ministry of Foreign Affairs, Foreign Trade, and Immigration, engaged in its first Joint Commission meeting with Guyana, focusing on collaboration in agriculture, tourism, education, climate change, and trade. The meeting resulted in the creation of an action plan to guide future cooperation, with Guyana’s delegation headed by H.E. George Talbot.


Additionally, Hon. Francis Fonseca, Minister of Foreign Affairs, Foreign Trade, Education, Culture, Science & Technology, held an introductory meeting with Mr. David Hodge, Chargé d'affaires of the US Embassy in Belize, where they discussed key policies under the previous administration, particularly their impact on security, migration, and human rights. Hon. Fonseca also received the Letters of Introduction from Mr. Ken Legins, UNICEF Resident Representative to Belize, with discussions centered on continuing collaboration in child protection, education, and health.


Under the category of Movers and Shakers, we shared how the government recently approved a $54 million debt write-off for patients at the Karl Heusner Memorial Hospital (KHMH), offering a much-needed relief to those burdened by medical bills. This move reflects a commitment to improving public health access for Belizeans.

Additionally, Belize has secured funding for two new hospitals in Punta Gorda and Toledo District, signaling continued investments in the country's medical infrastructure.


Furthermore, Belize reached an exciting milestone this month – the statistics for last year’s tourism trends are in, and we’ve broken records with an impressive 21% year-over-year increase since 2023! That’s nearly a 12% rise compared to pre-pandemic levels. We applaud the efforts of the Hon. Anthony Mahler, Minister of Tourism and Diaspora Relations, and his team who have accomplished so much in the tourism sector, ensuring the highest standards are in place to meet the growing demands. #Belizeisbeautiful.


These developments highlight the ongoing leadership and efforts of key figures in shaping Belize’s future, ensuring it’s a nation on the move towards healthcare improvement, democratic engagement, and economic opportunity.

Prime Minister Briceño Says Up Coming Elections will be his Last


Prime Minister John Briceño announced that if the PUP wins the March 12, 2025 elections, it will be his final term in office. He plans to retire after completing his tenure in 2030, allowing for a new leader to take over. Prime Minister Briceño Donates Robotics Kits to High Schools in Orange Walk


Prime Minister Hon. John Briceño donated brand-new LEGO Prime robotics kits to Banquitas USpace and every high school in Orange Walk, following the launch of Banquitas Uspace last December. A total of ten kits were distributed, aiming to expand students' robotics knowledge and address real-world challenges like precision farming and climate-smart solutions.

CURTIS M. GILLETT

A PASSIONATE, WARRIOR FOR THE ARTS

Curtis M. Gillett, an artist, producer, and director also known as the “Actor” or the “Theatre Man,” was born in Belize City, Belize. Raised on the southside of Belize, he spent his childhood on Rocky Road, Tanommah St, Iguana St, and Neal’s Pen Road. As the eldest of three children to Gerald (deceased) and Ellajean Gillett, Curtis grew up alongside his two younger sisters, Kimberly and Rochelle, and his older brother, Carl. From a young age, Curtis displayed a natural talent for acting, particularly his comedic flair, often leaving his family in belly pain from laughter during spontaneous, unrehearsed moments of entertainment.


Curtis briefly attended St. Ignatius Primary, James Garbutt SDA Primary, and completed his primary education at Grace Primary School (GPS). His time at GPS, under Principal Gloria Edwards, was pivotal in shaping his passion for acting as he performed in the Festival of Arts, Christmas plays, and graduations. Even after graduating and while attending St. John’s College, Curtis returned to Grace to continue captivating audiences with his performances. Reflecting on those years, he acknowledges that these experiences were crucial in guiding him toward his career path.


As a young teen, he was privileged to have seen the likes of Ray Gongora, Rita Flowers (deceased), Beverly Smith-Lopez (deceased), and others from Square Peg perform at the Bliss and unknowing to them, they laid an interest & foundation for Curtis. He is very happy to have seen Althea Sealy and Rosita Balthazar (deceased) perform dance pieces and spent time with Sistie Fairweather, Theodore Burrowes, Daphne Sheran, Gladys Stuart, Gwendolyn Gillett and Mary Valdez to name a few.


His passion for the Arts found Curtis hanging around the Bliss Institute, learning from Beverly Smith-Lopez, volunteering in various capacities in Festival of Arts and other events held at the Bliss. Curtis said “I found unexplainable joy, inspiration and motivation being there. Whether inside in an artistic setting or outside listening to the stories from some of the homeless who made the outside of the Bliss their home”.



During the 1991 September celebrations, Curtis performed his rendition of E. Roy Cayetano’s “Drums of My Fathers”. One critic wrote, “Curtis’ performance raised visible goose bumps …. A star is born….” This was followed by the formation of the Belize Theatre Company under the direction of Beverly Smith-Lopez (deceased), Diane Haylock and Myrna Manzanares (deceased). Curtis performed in epic plays such as “When My Father Comes Home”, “One of Our Sons is Missing” , “Run Fi Yo Wife” among others. A defining role for Curtis was as Steve Castillo in the TV series, “Noh Matta Wat”.

In 1994, Curtis became the National Drama Coordinator. One of his greatest accomplishments as National Drama Coordinator, was producing, “The Magnificent Seven”, an evening filled with class, elegance, history and culture honoring and celebrating the contributions of Edison “Seferino” Coleman, George McKessey, Shirley Warde, Gladys Stuart, Bernice Yorke, Nicholas Pollard and Gwendolyn Gillett to Belizean Theatre.


He was confident that opportunities and avenues for advancement would become available and worked toward making the most of the opportunity. Despite the Ministry of Education/Culture insisting that the National Drama Coordinator have a first degree in Theare Arts, no assistance was given. No scholarships. No study leave, no opportunities; only obstacles. Then and now, the Arts and its importance are frowned upon and disregarded. So, what do you do? You pursue a bachelor’s degree in Theatre Arts.


Upon successful completion of his degree from the University of South Florida in Tampa, USA, Curtis returned home excited and filled with ideas, international support, opportunities for the growth and advancement of the Performing Arts in Belize only to face stiffer obstacles and setbacks. Unfortunately, he was not allowed to enter the Bliss Institute, which left him deeply disappointed. Determined to follow his passion for theatre, he decided to pursue it abroad.

On the international scene, Curtis held roles in “Vinegar Tom”, “Ma Rainey’s Black Bottom” with Fanni Green, operas, “Tosca” & “La Traviata” conducted by Anton Copolla. “In Madness”, “States”, “Flawed Diamonds” and “Angel Academy”.


In November 2011, VIAVISION ENTERTAINMENT, led by its president Karl Villanueva, hosted “One Belize Evening” in Chicago, where Curtis was honored with the “Award of Excellence” for his significant contributions to the Arts in Belize. Curtis expressed, “I was deeply humbled and honored to receive such a prestigious award. I am always pleased and overjoyed when people would meet me and tell me that one of my performances had a tremendous impact on them or when people express interest in learning about the magic of theatre.”

In his spare time, Curtis can be found at the beach where he finds relaxation, peace, harmony, grounding, inspiration and creativity. Curtis also loves helping others, particularly people who are engaged in Arts related projects and need advice, help and direction. He serves as a board member for the Belize Association of Central Florida and The Heavenly Orchestra – Belize and donates his time and resources to various other causes in Belize and the US.


“I am always inspired and motivated by those who are doing their best to revive our Performing Arts. Your efforts are noteworthy. It is my hope that Belizeans at home and in the diaspora would invest their resources to our Arts” “The Arts are important because they help us understand the world, express ourselves and improve our mental health. They also help in building our communities and learning about our cultures and histories while stimulating creativity and problem-solving skills.”

“To those who have interest in the Arts, seek the advice and direction from a mentor. Plan well, execute and know that failure is part of the process. That failure isn’t a failure but a lesson. Take a break, but don’t stop!”

Recado Baked Chicken


Ingredients:

  • 2 whole chickens (3-4 pounds each)
  • Juice of 2 limes or ½ cup vinegar (for washing)
  • 1 golf ball-sized amount of recado (red spice paste)
  • 1 teaspoon black pepper
  • 2 teaspoons seasoned salt
  • 1 large onion, peeled
  • 4 cloves of garlic
  • 2 teaspoons thyme
  • 1 teaspoon sage
  • 1 sweet green pepper
  • 2 tablespoons Worcestershire sauce (Lea & Perrins)
  • 1 tablespoon caramel coloring
  • ¼ cup of melted margarine, olive oil, or vegetable oil

Preparation:

Preheat your oven to 400°F (200°C).

Clean the chickens with water and vinegar or lime juice, then let them air dry.

Blend the recado, black pepper, seasoned salt, onion, garlic, thyme, sage, sweet green pepper, Worcestershire sauce, and caramel coloring to form a smooth paste.

Rub the paste thoroughly over the chicken using a brush or your hands.

Place the chicken in a large greased roasting pan and bake uncovered for 30 minutes.

Reduce the oven temperature to 300°F (150°C) and bake for another 2 hours, covered loosely with foil. For a quicker option, bake at 350°F (175°C) for 1 hour.

Optional: For gravy, add one cup of water to the pan during the last hour of baking.

Belizean Orange Tart Recipe Ingredients:

  • 10 oz (280g) butter, diced
  • 10 Tbsp (125g) sugar
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 2 egg whites
  • Juice of 1 lemon


Cashew Nuts Filling:

  • 4 eggs
  • 10 Tbsp (125g) sugar
  • 8 oz (225g) cashew nuts, crushed
  • Juice of 1 large lemon
  • 12 Tbsp (180ml) evaporated milk (chilled and whipped)
  • Juice and grated rind of 1 large orange
