These ideals still ring through today which both countries continue to strive to uphold for the betterment of its peoples. So, when the Belizean diaspora celebrates the 4th of July, the independence of the United States as well as Belize’s independence, on September 21st let us take a moment to reflect on what sacrifices the forefathers and past leaders did to give us the treasure of freedom, for many an elusive dream.
In furthering the cause of good governance and democracy, the Government of Belize continues to pursue its goals and objectives on various fronts. Belize is blessed to have talented and hard-working Ambassadors representing the nation and its interests around the world.
Very soon, we will welcome back H.E. Mr. Néstor Méndez as the new Ambassador of Belize to the United States. A veteran in the foreign service of Belize and seasoned diplomat, Ambassador Mendez proudly represented Belize and the Americas as Assistant Secretary General of the Organization of American States (OAS). The Consulate of Belize in Florida welcomes the opportunity to work closely with Ambassador Mendez in reaching its goals and objectives.
At the same time, we extend sincere thanks to Ambassador Lynn Raymond Young for his dedicated service over the past four years. Appointed in 2021 Ambassador Young worked tirelessly to strengthen ties with the Belizean community in the U.S. while at the same time furthering Belize’s diplomatic presence in the United States as well as on multilateral affairs with the OAS. We wish him all the best as he embarks on new and exciting chapters.
Meanwhile, Prime Minister Hon. John Briceño and Minister of Foreign Affairs Hon. Francis Fonseca attended the 49th CARICOM Heads of Government Meeting in Montego Bay, Jamaica, where leaders focused on regional unity and pressing Caribbean issues.
Back home, H.E. Mrs. Rossana Briceño, through the Office of the Special Envoy, continued her impactful work—donating Chromebooks to students, expanding access to breast health services, and representing Belize at the Global First Ladies Academy on Leadership and Development.
While in Washington, D.C., Minister of Foreign Affairs Hon. Francis Fonseca met with U.S. Homeland Security Secretary Kristi Noem to discuss continued cooperation on border security, public safety, and asylum. Most notably, Belize signed a bilateral agreement with the United States to improve border security and information sharing, marking a significant step forward in regional cooperation.
The visit resulted in the signing of a Memorandum of Cooperation establishing a Biometric Data Sharing Partnership to combat illegal immigration and transnational crime. This marks another step forward in the strong 44-year U.S.–Belize partnership.
To further strengthen diplomatic relations, Minister Fonseca met with ambassadors from Vietnam, Thailand, and Slovakia, who formally presented their credentials.
From start to finish, this month brought a wave of inspiring stories worth sharing! A few highlights include GOB Movers and Shakers with the Ministry of Economic Transformation Securing a US$5.2 million dollar grant to advance poverty reduction from the Caribbean Development Bank (CDB), The U.S. Embassy in Belize donated nearly $100,000 USD to support the Ministry of Home Affairs and New Growth Industries, and the Mundo Maya Exchange, which is strengthening regional ties and promoting multi-destination travel.
Belize is making international headlines after archaeologists uncovered what may be the 1,700-year-old tomb of Te K’ab Chaak, the legendary founder of the ancient Maya city of Caracol. Found beneath the city’s northeast palace, the tomb contained jade artifacts, royal pottery, and the remains of an elderly man. If confirmed, it would be Caracol’s earliest royal burial and a major breakthrough in Maya history! Make sure not to miss this story.
Additionally, Forbes ranked Belize among the top destinations for U.S. retirees in 2025, while the country launched its National Cultural and Creative Sector Strategy, helping shape the future of creativity. In Sarteneja, a new reverse osmosis plant has arrived to improve the local water supply.
In this special edition of the Star of the Month for the Consulate of Belize in Florida, we are very proud to feature Miss Universe Belize, Miss Isabella Zabaneh. From her roots in Mango Creek to being crowned Miss Universe Belize 2025, Isabella’s journey is nothing short of inspiring—a powerful reminder that courage, kindness, and beauty with a purpose can open doors and create lasting impact. Miss Zabaneh, brings hope to all the young men and women of Belize aspiring to do great things in their lives and for their country,

New Rule Requiring Certain Noncitizens to Complete Alien Registration
| |
As of April 11, 2025, USCIS has implemented a new rule requiring certain noncitizens to complete alien registration. Failure to comply can result in serious penalties—including up to $5,000 in fines or 30 days in jail, plus civil fines of up to $1,000 per day. Additionally, not updating your address within 10 days of moving may lead to deportation unless you can show it was not willful or was reasonably excusable. Alien Registration Requirement
The policy, set to take effect immediately, requires undocumented individuals aged 14 and older to register, provide fingerprints and addresses, and carry proof of registration or face fines and possible jail time.
The Department of Homeland Security emphasized strict enforcement, with Secretary Kristi Noem stating that undocumented individuals should leave the country or face consequences.

Voluntary Return Incentive:
$1,000 and Free Plane Ticket via CBP App
The Department of Homeland Security (DHS) is currently offering an incentive for individuals who choose voluntary self-departure from the United States.
Through the CBP One app, eligible individuals may receive $1,000 in assistance plus a free plane ticket to facilitate their return to their home country. or another country where they have lawful status.
This initiative is an effort to encourage voluntary compliance with immigration laws. Learn More

I was raised in Mango Creek/Independence, Stann Creek Belize, and my journey has been shaped by a life of service, humility and big dreams. I recently completed my Bachelor’s in International Studies and Political Science (May 2024) and Master’s degrees in Professional Communication (pending graduation) from the University of Tampa, and every step along the way has deepened my passion for using communication as a tool for change. My studies gave me the opportunity to work in war-torn countries in the Middle East, solo-travel to 17 countries and connect with and study governments internationally.
As Miss Universe Belize, I’m committed to using my platform to uplift others and be our country’s ambassador. I’m especially proud of Project Royalty, an initiative I founded to help young women in Belize build confidence, discover their God-given identity, and realize their worth. Whether through free prom dress events, confidence camps, or community mentorship, I believe in creating safe, inspiring spaces for the next generation of Belizean women.
This season of my life has been full of growth, gratitude, and a renewed sense of purpose. I have always carried Belize in my heart wherever I go—and now I’m proud to wear the name across my chest! I am a product of both my country and the Belizean community abroad. Preparation has been in full swing, and I will be absolutely sure to give everything in me on the stage in Thailand, on November 21st!
To my fellow Belizeans—whether at home or abroad—never underestimate the power of an open heart. One of the quotes I live by is, “Have courage and be kind.” It’s a simple reminder that even in the most uncertain moments, bravery wrapped in grace can open doors. I also believe that “You can never lose; you can only learn. Your success is on the other side of your fears.” If there’s something in your heart you’ve been dreaming of doing, take the leap. Growth often lives just past discomfort, and the life you’re called to is waiting on the other side of your “what if.” Keep going—you’re capable of more than you think, and God has a purpose for your life.
Thank you to the Consulate for this honor, and to everyone who has supported me along the way. The crown I wear is not just mine—it’s for every Belizean girl who dares to dream big.

Maya King Waterfall
Maya King Waterfall, located in the mountains of Belize's Southeast Coast, is a popular natural attraction featuring two cascading falls, especially stunning during the rainy season. Just under 30 minutes from Placencia, the journey to the falls offers scenic views of orange groves, a bamboo canopy known as the "Bamboo Cathedral," and a winding mountain road shaded by tall trees.

- 2 garlic cloves, minced
- 1 tbsp fresh ginger, minced
- 1/4 cup onion, diced
- 1/4 cup bell pepper, diced
- 1/2 cup tomatoes, diced
- 6 crushed cardamom pods
- 3 tbsp curry powder
- 2 tsp Tabasco or hot sauce (optional)
- 1.5 cups seafood or chicken broth
- 1.5 cups full-fat coconut milk
- 2 tbsp cilantro, chopped (for garnish)

Preparation:
- Cook shrimp: Season shrimp with salt and pepper. Heat 1 tbsp oil in a skillet, cook shrimp until pink, then set aside.
- Cook veggies: Heat the remaining oil in the same pan. Add garlic, ginger, onion, bell pepper, and tomato. Cook for 5 mins until tender.
- Add spices: Stir in cardamom, curry powder, and Tabasco (optional). Add broth and coconut milk. Simmer for 10-15 mins.
- Finish dish: Return shrimp to the pan, simmer for 5 mins.
- Serve: Serve over rice, garnish with cilantro, and add fried plantains on the side.

Crust:
- 1 cup flour
- 1/8 tsp salt
- 6 Tbsp cold butter
- 2-3 Tbsp cold water
Filling:
- 1 1/4 cup of condensed milk
- 1/4 tsp salt
- 1 1/4 cups water
- 4 egg yolks, beaten
- 1/2 cup lemon or lime juice
- 3 Tbsp butter
- 2 tsp lemon zest
Meringue:
- 4 egg whites
- 1/2 tsp cream of tartar
- 1/2 cup sugar

- Preheat oven to 475°F.
- Make crust: Mix flour and salt. Cut in butter until crumbly. Add water, mix, and form dough. Roll out, place in pie pan, trim, and crimp edges. Prick with fork. Bake 8-10 mins until lightly brown. Cool.
- Reduce oven to 325°F.
- Make filling: Mix sugar, cornstarch, and salt with water. Cook over medium heat until boiling. Add egg yolks, then cook 2-3 mins until thick. Stir in lemon juice, butter, and zest.
- Make meringue: Beat egg whites and cream of tartar until foamy. Add sugar and beat until stiff peaks form. Spread meringue over filling, sealing edges.
- Bake: Bake 25-30 mins until meringue is golden. Cool 1-2 hours, then refrigerate for 1 hour before serving.
