Don't you love the light from big windows...

My job puts me in front of a lot of good food. Yes, the temptation is real. I am always thankful for big windows with a soft light. The challenge is balancing the exposure for the highlights and the shadows they create. Sometimes you nail it and sometimes you don't. When you have good natural light use it to your advantage. And, bracketing your exposures is easy with most cameras. Call me to photograph your event or if you need help with your photography.

Cornbread from Jesse

Ingredients

I cup stone ground cornmeal

1 cup milk

1 egg

Cooking oil 

One teaspoon baking powder

One and a half teaspoons baking soda

No sugar. Whatever you do, don't add sugar.


Directions

Preheat the oven to 450 degrees.

Oil an eight inch cast iron skillet (it must be cast iron), and put in some extra oil.

When the oven is up to temperature, put the oiled skillet in. 

Mix all ingredients in a bowl.

When the skillet is up to temperature, take it out of the oven. Pour the extra oil into the batter (if the oil is hot enough, it will sizzle). Mix well. Pour the batter back into the hot skillet (again, it should sizzle). Bake for about 20 minutes or until golden brown on top.

Turn the pone out onto a plate. Cut into quarters or whatever sized pieces you may want. Serve hot.
