We are counting down markets in the parking lot! Saturday is one of SEVEN opportunities left to shop the market in October! Delmer tells me he is going to have a lot of beets! Check out his cool pumpkins and other fall decor at the market, as well.
I know the markets are a bit smaller these days, but the produce remains superb and I am tasking you with rewarding our hard working vendors by buying all their veggies (and baked goods, and wonderful handmade cra
ft items)! Here is a list of what you might expect at this Saturday's market (10/10): green beans, tomatoes, peppers (variety -- mild through hot), sweet potatoes, okra, eggplant, kale, squash (summer, zuch, butternut, acorn, spaghetti), turnips, beets, apples (wide variety), honey, watermelon (nearing the end/get it while it lasts), KS wheat bread, delicious cookies, quick breads, fruit pies, jelly (wide variety/many vendors), jewelry, books, house plants and more!
Remember that the market is a relationship of mutual benefits: if you don't shop, the vendors will be more likely to close up shop! Seasons change, and it is true we are nearing the end of season, but look at all the fresh veggies we had to offer at the market this week! It ain't over till Mother Nature freezes (Can that be a new saying?)
Whoops! I slipped a picture of some cookies in there, but those are good too!
Barring a blizzard, the market takes place in the parking lot at 7th and Merchant EVERY Wednesday at 5pm and EVERY Saturday at 8am
through the end of October. I look forward to seeing you there!

What is a Helpful Harvester?
For a minimum donation of $100, your business can become a "Helpful Harvester" of the Emporia Farmers Market. Receive 1/2 the value of your contribution in market coupons including an invite from you to your customer to join you in shopping at the Emporia Farmers Market.
What is a Friend of the Market?
Friends donate their money or their time to market operations.
For as little as $10, you can get your name listed as a Friend of the Emporia Farmers Market.
Who are Market Farmhands?
Farmhands are people like you, who help keep the market going by volunteering at the market kiosk on occasion, and provided the necessary hands for market fundraisers. Promised Recipes! Butternut Squash and Eggplant, the Main Ingredients in two of my favorite fall meals.

Butternut Squash and Blue Cheese -- Yum!
My family cleans the bowl every time we make this dish. Pick up a butternut squash or two and a large onion (all preferably from t he market. You will also need blue cheese, and a bit of sage and black pepper for seasoning and some bread crumbs for topping (that last slice of bread from the market--if there is a last slice--works perfectly)
My short version: Peel the squash and dice it. Steam it until tender. Slice the onion and saute in a bit of olive oil in a skillet. Layer the squash, onion and blue cheese in a baking dish. Sprinkle with sage and black pepper. Top with a light layer of bread crumbs. Bake in the oven about 25 minutes, 350 degrees.
Another favorite in my house...
Eggplant Parmigiana (we usually just call it eggplant-tomato casserole)
My technique: Pick up 4-5 eggplant and 10-12 fresh tomatoes (mix red and yellow tomatoes to make this an extra attractive dish) at the market. Fresh basil is good. A small onion makes it extra tasty. And then pick up a ball of mozzarella cheese at Reebles.
Slice the eggplant and the onion and saute in a bit of olive oil on the stove top. Throw the basil and any fresh seasonings in the skillet just before you are done. Layer the eggplant/onion in a baking dish with slices of the mozzarella cheese. Top with your diced tomatoes, juice and all. Sprinkle with bread crumbs. Bake in the oven about 30 minutes at 375.
This results in a yummy casserole (or a wonderful soup, depending on the tomato to eggplant ratio -- both work!).
There are several variations of this recipe online. I believe this one is
the one at Taste of Home that first inspired me.
