CHICKPEA TABBOULEH

A wonderfully refreshing and deliciously nutritious variation of a Middle Eastern salad that's fast becoming a must-have staple in the U.S., our Chickpea Tabbouleh recipe will delight family and friends alike with its life-affirming blend of cooked garbanzo beans, dry fine bulgar wheat, diced tomatoes, parsley, green onions and more. 

Easy to prepare and even easier to enjoy!

INGREDIENTS

  • 1.5 cups cooked garbanzo beans (approx. 1-15oz can) 
  • 1/4 cup dry fine bulgur wheat
  • 1/2 cup + 2 tbsp extra virgin olive oil
  • 1/2 cup lemon juice
  • 3/4 cup diced tomatoes
  • 3 bunches finely chopped parsley (can use food processor)
  • 3 finely chopped green onions
  • 1/4 cup finely chopped mint
  • salt to taste
  • black pepper to taste

INSTRUCTIONS

  1. In a bowl, add beans, dry bulgur wheat, oil, and lemon juice – thoroughly toss together. 
  2. Allow to sit for 45 minutes.  
  3. Add in tomatoes, parsley, mint, green onions, salt and pepper - toss thoroughly.  
  4. Place in refrigerator and allow to chill at least 1 hour.  
  5. Serve.
