Greetings Culinarians and Associates,

November Holiday Dinner

Our annual Holiday Dinner, silent auction and elections at the Clearwater Casino were a huge success.  The silent auction generated $2,158 dollars for the apprenticeship. Additionally the Chaine de Rotisseurs donated a lump sum of $2500 dollars to the apprenticeship.  Their support over the years has helped the apprenticeship grow and has enabled us as a chapter to send apprentices to regional and National conferences.  A special thank you goes out to Gary and Elaine Fuller for all their work on the silent auction.  We had over 90 people come out for the event and they were not disappointed.  The staff at the Clearwater again did an amazing job from the tray passed appetizers to the incredible meal we all enjoyed.  Without the support of the Clearwater Casino and all the contributors to the silent auction this night would not have been a success.  Click to see pictures of this event.

Election Results

Governor's Inaugural Ball 

We are working with the Governor's Ball Committee now for preparations for the next Inaugural Ball on January 11th,  2017.  Our revised letter with all the updated information will be going out in a couple weeks to all the schools, caterers and restaurants that are a part of this event.  The Governors Ball Committee has made some changes regarding the drop off location for all vendors and as soon as I get the new details it will be sent out to all.  We have set the bar high in the past events and plan on making this event even better.  This event will help supply the necessary funds for us to be able to grant scholarships for our membership for the next four years.   

Apprentices

Two of our apprentices took their CSC practical exams recently and passed.  Congratulations to Charity Chappell and Shalbe Welsh for passing their Certified Sous Chef practical exams at RTC. We are looking for houses that meet the criteria for having an apprentice. Keep in mind that you do not have to be a certified chef to have an apprentice. You just need to be at a level of chef de cuisine if you were certified. Your house needs to do at least two meal periods, lunch, and dinner for example. Maybe breakfast, lunch. Your business needs to be creating at least 51% of your items from scratch. The benefits for apprenticeship are many but one of the most valuable reasons would be that you have an apprentice for three years working with you. In today's workforce we have all seen the high turnover from workers that are just looking for a paycheck and are not on a career path. If you are looking for a more stable workforce and are able to mentor and train our upcoming culinarians, please  reach out to me. We are also looking for apprentices.  We have businesses that are looking for apprentices but currently we do not have any without houses.

Practical Exams

I would also like to congratulate Chef Roger Knapp and Chef JJ Meland of Bates Technical College for passing their Certified Executive Chef practical exams at RTC.

Upcoming Events

Our next board meeting is at Bates Technical College on January 9th.   We do not have any meetings in December as a rule.  We might have a special meeting for the Governors Ball committee to go over last minute details.  Our February Presidents Awards Dinner is at Double Tree Seatac on the 13th of February.  Information for that event will be on our events page soon.

I would like to reach out to Jim Douglas, a longtime board of trustee member and supporter of our chapter for a speedy recovery.  He recently was ill and did not make it to our dinner meeting at the Clearwater Casino.  I am told he is doing better and we will be seeing him soon at another meeting.

Again, I would like to thank everyone that is helping with the Governors Ball that is quickly approaching.  It is a very large event and requires many months of planning and a group of dedicated chefs and individuals working together to pull it off. Thank you all for your time and efforts.

The Washington ProStart InvitationalĀ®  is the country's premier secondary school competition focused on restaurant management and culinary arts. Annually, student competitors put their skills to the test in front of industry leaders, NRAEF Trustees, state hospitality associations, and family and friends - all with hopes of earning a coveted scholarship from one of the nation's premier culinary and restaurant management programs. 
They are looking for chefs to help judge this event. If you are interested in being a judge, please email [email protected].
