Going to the German Deli is a unique experience to many of us who grew up in German households in the USA. Thankfully there were a number of wonderful authentic delicatessens in Southern California. 
It was a weekly routine to visit the deli on Saturday before lunch. As a young child, I remember being too short to see over the transaction counter, but that was okay, because I could see all the sausage and meat just fine through the glass case.  Each in a neat row edged with vibrant faux greenery. The shop had the aroma of freshly spiced and cured meats. Our visit started by taking a number, and then browsing the shelves for our favorite packaged goods. Of course I was drawn to the imported sweets and cookies and almost never left without a block of Dextro Energy candy, Gummibärchen, or Manner Schnitten.
 
When our turn came to order at the counter, I was pacified with a sample Wiener Würstchen, while my mom did all the ordering (in German). You could tell who was "in the know" if they spoke German. And my mom was asked on more than one occasion for recommendations on sausage or how to prepare something by those who had never been to a German deli.
 
Being at my mom's side during all 
those trips taught me the names of the numerous types of sausage, even the ones that weren't my favorites. The sausage; Aufschnitt (an assortment), Schwarzwälder Schinken, Zungenwurst, Jagdwurst, Sülze, etc. was sliced, weighed and wrapped in white butcher paper. There was enough for Saturday lunch, Sunday breakfast and lunch for Papa during the workweek. 
   
Fleischer or Metzger (Butcher) is a profession with a long tradition and is one of the oldest trades in Europe. The profession has changed considerably in the course of time. While slaughtering once was the focus of the activity, Today it is the refining of the meat. Depending on the certifications, the butcher controls the slaughter, the production of meat and sausage products, the sale of meat products and/or the packaging of products.

Various methods such as salting, wet and dry curing, drying, smoking, cooling, freezing and heating are used in the processing of the meat in order to make the products even more durable. When preparing sausages, the butcher fills the sausage mass into the casing and closes it.  Pates , head cheese and aspic products as well as regional specialties are prepared and preserved according to time tested and traditional recipes - This is why we appreciate our German Metzger and what make a visit to the German deli so special.  

Two weeks ago we got the "Wurst" news that the owner's of Mattern Sausage had sold their delicatessen in Orange to retire. No this is not an April Fool's Prank!  Before you panic, I was assured that Mattern's wholesale sausage production will continue, business as usual, and we will still be able to buy their wonderful sausage and meats at the shop under the new owners.  For that we are truly grateful!  

We'd like to congratulate Willi and Anni Mattern on their retirement, but not before we share a little background.  Willi Matern is originally from Vöcklabruck  a small town in Upper Austria, just off the A1, about half way between Salzburg and Linz.
In 1956 Willi emigrated with his family to California where he went to high school and entered the US Army.  As it happened, he was stationed in Munich, where he met his wife Anni. 
They ultimately returned to the States to raise their family in La Plama, California.   Willi was trained as a Butcher both in Europe and in the US. For a time he worked for Fred Reich's Hickory Sweet in Los Angeles. 

Mattern Sausage and Meats opened in 1982.  Early in it's operations the sausage sold in the front of the deli was manufactured in the back. The wholesale business grew and i n 1998 and Mattern Sausage manufacturing moved out of the deli's east Chapman location to an industrial  space of its own,  in West Orange.    Mike Mattern, Willi and Anni's son,  runs the 11,000-square-foot factory. There m assive machines imported from Germany and Austria mix huge batches of each sausage recipe and churn out 90 varieties of sausage ( everything from salami to weisswurst to spicy Polish sausage)    that not only stock Mattern Sausage and Meats, but are also shipped across the country to hotels, restaurants, food distributors, and yours truly, to the Phoenix Club.
I would like to congratulate Willi and Anni on a job well done.  I will personally miss seeing your smiling faces behind the counter of the deli.  And on behalf of the Phoenix Club, I wish you a lengthy and satisfying retirement.  

It seems we'll have to come to the Phoenix Club to run into the Matterns in the future. You can test their delicious sausage while you are here. But if you would like your own German deli experience you can still visit Mattern Sausage and Meats  at 4327 E. Chapman Ave. It's open 9:30 a.m. - 5 p.m. Tue. - Fri., and Saturdays 9 a.m. - 5 p.m. Information: 714-639-3550.

The Phoenix Club Gemischter Chor will be joined by 4 guest choirs, Germania, House of Germany, Germania Chor, El Cajon, Swiss Harmonie, and Edelweiss Santa Barbara.
Snack Bar and Cocktail Bar will be open.

The Concert will be held in the Ballroom, starting at 3pm.  Doors open at 2pm.
Sunday April 23rd.
Admission is $5 /person.
