Tuesday: Mexican Lime Chicken and Rice / Mexican Street Corn

~ In ode' to Cinco De Mayo we will be whipping up some festive soups. The first is a light brothy soup packed with flavor. Shredded chicken, onions, garlic, carrots, rice, and seasoned perfectly with herbs and spices. Then a dash of lime juice to brighten it all up. An ideal lunch or light dinner.

Mexican street corn, I know there is quite a few of you out there excited for this one. It is unique in its texture and flavor and sings of summer. Corn and other veggies make up this soup and with the cotija cheese and cream it makes for a creamy flavorful soup. Pair with our herb salt bread.
