Tuesday: Classic Chili / Corn Chowder
~ Everyone loves a good bowl of chili, no matter the time of year, but in the fall it just hits perfectly. Seasoned beef, onions, garlic, fresh bell peppers from Ambrose farm, beans, and of course tomatoes, make for the ideal quick weeknight dinner.
We are using up all the local produce while we have it, and this might just be the last of the corn. Now we do freeze a lot of corn, so we have it into the winter, but we are using it right off the cob to make this comforting chowder. Filled with potatoes, corn, carrots, onions, and all the fresh herbs, this soup will keep you coming for one more bite.
Wednesday- Stuffed Breads
~Pepperoni Rolls and Flavor of the Week Roll
~Focaccia
~Olive Oil Bread
Thursday- Italian Gnocchi Soup / Sausage Kale and White Bean Soup
~ I love a good tomato and cream based soup. This soup will have tons of tomatoes, carrots, onions, garlic, spinach, and those delicious potato dumplings, gnocchi. Full of flavor and a soup the whole family will love.
I am excited about this soup, because I love the local kale right now. It's so flavorful and textural and it makes soups, skillet meals, and salads so much better. This soup begins with browning Thomas sausage then adding onions, garlic, carrots, celery, to make a flavorful base. Then we add in white beans and kale to give it all the texture and additional flavor. Perfect early fall soup.
Friday- Stuffed Banana Peppers
~ On the theme of using the fresh produce while it's still growing, we will be whipping up our stuffed banana peppers again. Now the last time we made these babies, there was definitely some spicy peppers in the bunch. We cannot guarantee that you won't get a spicy one, but we do use the mild peppers and the sweet and salt pepper sausage from Thomas. Then we make up our scratch made red sauce to pour all over top add a little cheese and bake it up. The perfect ending to a busy week. Dinner is done.
Saturday- Quiche
~ Bacon, Mushroom, White Cheddar
~ Zucchini, Tomato, Italian Cheese
~ Broccoli and Cheddar
Fiesta Salad
~ Black beans, fresh corn, bell peppers, and tomatoes all seasoned perfectly with just right the right herbs and spices. All of that deliciousness on a bed of greens and sprinkled with shredded cheddar cheese.
