During this unusual time of social distancing, we have found it more important than ever to stay connected and find ways to get to know each other better. This was the inspiration for our new video podcast series, On Tap. During each weekly episode, Wade will interview a new consultant member beginning January 5, 2021. Join us as we introduce you to members of the consultant family and get an insight into their unique and diverse perspectives and personalities, each of which contributes to the amazing culture we have here at FCSI The Americas.

Earlier this month, the Pacific Northwest Chapter of FCSI The Americas and Performance Reps NW hosted the ‘BYO’ CEU Experience, a virtual two-day live stream event for FCSI members. The event allowed members to build their own schedule and earn FCSI Continued Education Credits (CEUs). Members were able to choose from seven different individual sessions offered over a two-day period. Each session featured a special guest speaker and educational equipment-based content.

The two-day event featured Tim McDougald (FCSI The Americas PNW Chapter Lead) as moderator and Janel Rupp with Performance Reps NW. Special guest speakers included: Robin Ashton, TheAshtonReport; Joe Carbonara, FES Magazine; Richard Young, Frontier Energy; Betsy Craig, Menutrinfo™, LLC; Kevin Kochman, KCL; and closing speaker Rich Malachy, Malachy Parts & Service, FEDD Group. Sessions were filled with quality content covering topics from the state of the Industry data, post pandemic changes to the way we dine, energy efficient kitchens of the future, designing an allergen friendly back of the house, trends in equipment, and the important role social media plays in creating a digital footprint.

Educational session speakers included: Nate Sanford with Sammic, Tim Wilczak and Marcy Mathews with Delfield, Chef Patrick Simon and Deb Friar with Welbilt, Paula Donohoo with Jackson WWS, Joe Nicholson with Cleveland and Tom Cowley with Caddy Corp. The sessions covered everything from serving and sanitation solutions, sous vide, conveyors and accumulators, the basics of steam, to Warewashing and featured a live stream cooking segment with rapid cook ovens and combis from the Performance Reps NW test kitchen.

The FCSI Educational Foundation Needs Your Help
Greetings,

As we reach the end of the year, I know many of you will be making year-end donations to your favorite charity or cause. We hope that you will keep the FCSI Educational Foundation in mind when making those giving decisions.

The Foundation is supported solely by the members of FCSI. We are not a public charity, but one created to help FCSI with grants, internships and scholarships. We receive no outside funding… only what our members donate.

It has been a tough year for everyone and the Foundation is no exception. All of our fundraising initiatives were cancelled because of the pandemic, as has been the case with so many non-profits. Except for a generous donation from the Birchfield-Jacobs Crab Feast (which actually didn’t take place), our income has been static.

Compass Consulting November Industry Report
The November issue of the Compass Restaurant report is now available. The report indicates that November same store sales saw another decline; posting the worst results since August. This is the first month since April that sales have been worse when compared to previous month. Additionally, the small business optimism index fell 2.6 points in November, dragged down by lower expectations for economic improvements in the near future. Small business owners are still facing uncertainties.
