Canadian Winter Feel Good Stories
|
Canada is a beautiful big country with a lot of winter. Much of Canada’s agriculture is seasonal, and our food supply systems do rely on importing much of what we eat. Some of my buddies tell me we have lots of food security as long as you have a .30-06 and good drainage in the floor of your garage; the white tail deer population disagrees.
Long before the disruption of supply lines this year, food security utilizing localized resources and fresh healthy ingredients has been a Canadian priority. Some solutions are based on technology and food growing while others can be community involvement and education. Here are a couple of feel good examples.
Rooftop gardening is a means of getting high-quality produce into the hearts of the world’s great cities, a method that reduces both tailpipe emissions and food spoilage. Lufa Farms of Montreal now has four such rooftop gardens. The latest addition, built atop their own distribution center of 160,000 square feet, is about the size of three football fields, and cultivates 100 different varieties of fruits and vegetables using hydroponics. Production estimates it can supply 2% of the 1.7 million Montreal population with fruits and vegetables. The greenhouse keeps the operating building below warm in the winter and cool in the summer.
Community Food Centres of Canada currently has 13 centres and works with 178 communities. A Community Food Centre is a welcoming space in a neighbourhood where people come together to grow, cook, share, and advocate for good food. Community Food Centres provide people with access to high-quality food in a dignified space. People learn cooking and gardening skills there, and kids get their hands dirty in the garden and kitchen in ways that expand their taste buds and help them make healthier food choices.
These little stories show that time, understanding and care on a community level can grow many solutions for a nation.

Once you have logged all required CEUs - don't stop! Professional Members can roll forward up to 6 CEUs to 2021, Senior Associates can roll forward up to 3, and Associate Members can roll forward 1 CEU. Continue learning to continue earning!

Southeast Chapter Hosts a Second Education Event
|
An amazing group of masked FCSI, MAFSI and NAFEM members came together for the second FCSI Southeast Chapter local event in 2020. A day of learning, cuisine, and camaraderie was hosted by Welbilt and their culinary team on Thursday, November 5th in New Port Richey, FL. The food was incredible and the double lattes were a plus -- kudos to the chefs and baristas!
The program included education on speed ovens and hot holding along with what is important to remember and key mistakes made by operators. During the presentation Welbilt’s culinary team, Chef Kim Miller-Boivin, Chef Andy Coniglio, and Chef Ted Speck, prepared live demonstrations to combine hands-on application with the presentation. Following lunch, Kayla Williams from ITW Food Equipment Group presented Food Safety for Dishroom Operations. A great discussion among attendees occurred when covering the topic ‘Understanding the 5 Log Kill’. The day ended with a tour of Welbilt’s ETC test kitchen and R&D lab areas.

FCSI Urged Congress to Pass PPP Small Business Forgiveness Act
|
In November FCSI leaders agreed to sign onto a letter to leaders of the US Senate and House of Representatives in support of the Paycheck Protection Program Forgiveness Act. In part, the letter urged Congress to "quickly consider legislation that will help countless businesses navigate the overly complex forgiveness process." The proposed legislation would forgive PPP loans of less than $150,000 after borrowers complete a simple, one-page document.

The newest Compass Restaurant Industry Report shows a softening in consumer sentiment in October due to US election stress. The report also points to an increase in interest for ghost kitchens and the move by many QSR chains away from dining rooms.
