2020 being stressful is the understatement of the year, and now that we have officially entered into a brand new and very unique school year it’s not uncommon to feel like our tanks are constantly running on empty! A good nights sleep can literally become a dream and the lack of rest then overflows into all other areas of our lives, making us irritable, forgetful, and even prone to getting sick. While the cup of coffee in the morning may be a much welcome pick-me-up during the day, the main thing we really need is to be able to get to sleep quickly and to be able to sleep well through the night. Fortunately, the solution to good sleep may be easier, and tastier than you think!
The Alaska Sleep Clinic put out a list of the best foods to eat to get better and healthier sleep in 2015. On the list, there was an item that popped up again, and again, and again! That item was seafood! But why on earth would us upping our seafood intake factor into a better night’s rest? Four reasons; Tryptophan, Magnesium, Calcium and Vitamin B6.
Tryptophan is an amino acid that when eaten gets turned into serotonin, which is then converted to the hormone melatonin, Magnesium is a mineral that is instrumental to our rest and acts as a natural relaxant. In fact, magnesium is often called the “sleep mineral” and a lack of magnesium can be directly linked to trouble going to and staying asleep at night. Calcium aids our brains with the process of making melatonin and a lack of calcium can have us waking up in the middle of the night and being unable to go back to sleep. Insomnia has been shown to be able to be combatted by a calcium rich diet. Finally, Vitamin B6 helps convert tryptophan into melatonin, and a deficiency of this vitamin has been linked to low serotonin levels, poor sleep, depression and even mood disorders which can lead to insomnia.
Put these four components together and you have some powerful aid in both getting to sleep and staying asleep during the night! Items like Yellowfin Ahi Tuna and Salmon are some examples of items that are bursting with these components, and best of all they are easy to prepare and absolutely delicious! So as we bravely continue into this new school year, and even busier schedules, remember to add some seafood meals to the weekly menu, to help you and the family get those restful Zzz's that you deserve!

Rainbow Trout Baked & Crusted

Ingredients:
- 6 8oz Rainbow Trout Fillets
- 1 1/2 tsp Garlic salt
- 1/2 tsp Black pepper (optional)
- 1/4 cup Mayonnaise
- 6 tbsp Nut Crubs
- Lemon (optional)
- Soft low carb veggies (like tomatoes, zucchini, green beans - optional)

Directions:
- Preheat the oven to 400 degrees F (204 degrees C). Line a sheet pan with foil or parchment paper, and grease lightly.
- Place the Rainbow Trout filets on the lined pan. Sprinkle with garlic salt and black pepper on both sides.
- Spread about 2 teaspoons (8 g) of mayonnaise over each filet. Sprinkle grated parmesan cheese on top.
- If you want to make a sheet pan dinner arrange soft low carb veggies in a single layer around the fish. (Harder vegetables are not recommended, because they won't cook through by the time the fish is done.) Drizzle them with olive oil, then sprinkle with sea salt and black pepper.
- Bake for 10-12 minutes, until the fish flakes easily with a fork. Squeeze with fresh lemon before serving.

Ingredients:
- 4 large potatoes, peeled and cut into strips
- 1 Box of J.O. Spicy Seafood Batter
- 1-1/4 cup of water
- 1 quart vegetable oil for frying
- 1 ½ pounds Faroe Island Salmon fillets
|

Directions:
- Place potatoes in a medium-size bowl of cold water. In a separate medium-size mixing bowl, mix together J.O. Batter Mix. And water
- Preheat the oil in a large pot or electric skillet to 350 degrees F (175 degrees C).
- Fry the potatoes in the hot oil until they are tender. Drain them on paper towels.
- Dredge the fish in the batter, one piece at a time, and place them in the hot oil. Fry until the fish is golden brown. If necessary, increase the heat to maintain the 350 degrees F (175 degrees C) temperature. Drain well on paper towels.
- Fry the potatoes again for 1 to 2 minutes for added crispness.

Pan Seared Thai Chili Scallops
|
|
Ingredients:
- 3 tbsp 4 Heart Ghee Butter (in our retail area!)
- 1 lb scallops, defrosted, patted dry
- 1 tsp salt, celtic sea salt
- 1 tsp pepper, freshly cracked
- 2 tbsp garlic, diced
- 1/4 cup thai basil, diced
- 1 tsp chili paste, add more as desired
- 1/2 lemon, sliced into half-wedges

Directions:
- Heat butter in pan on high heat until melted and lightly foaming.
- Pat scallops dry with paper towel and generously season scallops with salt and pepper.
- Add scallops into pan, with space in between so they can crisp.
- After about 4 minutes on one side, flip scallops. They should have a golden crust on the side that was face-down. (If not, increase heat, and let sear a bit more.)
- Add garlic and thai basil and stir quickly, let lightly brown and become fragrant, do not let burn (about 2-3 minutes).
- Add lemon slices, chili paste, and stir.
- When scallops are still springy to the touch, but bright white and opaque and browned on both sides, serve and top with sauce.

Ingredients:
- 1 1/2 pounds tuna
- 1 red bell pepper
- 1 green bell pepper
- 1 small onion (sweet if available)
- 6-10 large button mushrooms
- 2 lemons, cut into wedges
Marinade Ingredients
- 1/2 cup extra virgin olive oil
- 2 tablespoon chopped onion
- 1 tablespoon chopped fresh rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 garlic cloves

Directions:
- Cut into bite-sized pieces: Cut all the fish and veggies into similar-sized pieces; this helps everything lay flat when it is on the grill.
- Marinate the fish and vegetables: To make the marinade, purée the onion, rosemary, garlic, salt and pepper in a food processor. Drizzle in the olive oil while puréeing, continue to purée until smooth, about 1-2 minutes.
- Coat the fish and veggies in the marinade. Set in the fridge for at least an hour and up to overnight.
- Thread onto skewers: When skewering the fish and vegetables, pierce the fish against the grain, and select pieces of veggies that are close to the same size as your fish. This is important, because if the pieces are different widths, some things will be charred and others undercooked.
- You also want to be careful when loading up the skewers; it's easy to stab yourself by accident!
