Goat Cheese Ravioli with 
Mushroom Sage Cream Sauce & Fig Balsamic Drizzle
  
  • 2 Tbsp Wild Mushroom & Sage Olive Oil
  • 2 Tbsp Fig Balsamic Vinegar
  • 24 wonton wrappers
  • 8 oz. fresh goat cheese
  • 1 large egg
  • 1/3 cup thinly sliced onions
  • 1-2 cloves of garlic, chopped
  • 1/3 cup heavy cream
  • 1/3 cup white wine
  • Salt & fresh ground pepper 
     
Directions:
  • Whisk together goat cheese, egg, and salt & pepper for filling. Set aside
  • Place half of wonton wrappers on lightly floured surface and mound a generous teaspoon of filling in centers. Wet edges around filling with water and lay a second sheet on top. Thoroughly seal edges of each ravioli. Boil in small batches for 2 1/2 to 3 minutes per batch.
  • In a large pan, saute thinly sliced onions and chopped garlic cloves in Wild Mushroom & Sage Olive Oil over medium heat until onions become golden in color. 
  • Add white wine to onions and reduce by half. Add cream and simmer for an additional minute whisking to combine. Season sauce with salt and fresh ground pepper.
  • Pour the warm cream sauce over raviolis and toss. 
  • Drizzle with Fig Balsamic Vinegar and serve immediately
Fig & Walnut Butter Apple Pie
 
Directions:
  • In a bowl, combine apple slices with lemon juice, orange juice, and orange zest.
  • In a separate bowl combine sugar and flour.
  • Roll one piecrust into a 13 inch circle
  • line bottom of a 9 inch pie plate with the dough, trimming to a 1/2 inch overhang.
  • Beat egg and salt together. Brush bottom and sides of the pie crust with egg wash.
  • Toss apple mixture with sugar mixture. Add the Fig & Walnut Butter and stir well
  • Place filling in piecrust, spreading apples evenly.
  • Roll the second crust into a 13 inch circle and place on top of the apples.
  • Tuck the top edge of dough under the bottom edge of dough and press together to form a seal.
  • Pierce the top of the pie several times to vent.
  • Brush top with egg wash and sprinkle with sugar.
  • Bake at 400 degrees F for 45-50 minutes or until brown and bubbly.

Slow Cooker Cinnamon Vanilla Latte

Brewing up decadent vanilla lattes couldn't be any easier. Perfect for busy weekends and holiday mornings!
Ingredients: 
  • 4 cups milk
  • 2 cups very strong brewed Dark Canyon Fireside Favorite coffee (available at Crave)
  • 1/2 cup Vanilla Coffee Syrup
  • Whipped cream (optional)
  • Cinnamon Red Hots
Directions: 
  1. Add milk, coffee, and vanilla coffee syrup to a 2 quart or larger slow cooker (available at The Merry Peddler) Stir.
  2. Cook on high for two hours or until heated through. Make sure it doesn't boil! You may also heat it on low, but it will take a little longer to heat up. Turn slow cooker to warm setting to keep latte warm for 2 - 3 hours. You can use low to keep it warm if your slow cooker doesn't have a warm setting, but keep an eye on it. Stir occasionally to make sure it doesn't scald.
  3. Scoop by the ladleful into individual mugs. Top with whipped cream and Red Hots. Serve.

Maple Sugar Cookies with
 Maple Glaze
Yield: 4 dozen cookies 

Ingredients
  • 2 sticks butter (16 tablespoons)
  • 1½ cups granulated sugar
  • ¼ cup packed brown sugar
  • ¼ cup pure maple syrup
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ¼ teaspoon salt
  • 3 egg yolks
  • ½ teaspoon vanilla
  • 2¾ cups all-purpose flour
  • Maple Leaf cookie cutter
For the Glaze:
  • 2 tablespoons Lester's Fixins Maple Syrup Soda (available at Crave Candy and Soda)
  • 2 tablespoons butter, melted
  • 1 tablespoon milk
  • 1½ -2 cups powdered sugar
Instructions
  1. Preheat oven to 325F. Line cookie sheets with parchment paper or a silicone baking mat, set aside.
  2. In the bowl of a stand mixer fitted with a paddle attachment or a large mixing bowl and hand mixer, cream the butter and sugars together until fluffy and creamy. Add the maple syrup, egg yolks, and vanilla.
  3. In a medium sized bowl, stir together the flour, baking soda, cream of tartar and salt. Gradually add the dry ingredients to the batter, mixing on low until just combined.
  4. Chill 3-4 hours before rolling out to 1/4" thick and cut with Ann Clark Maple leaf cookie cutter
  5. Bake for 12-14 minutes or until the edges are just golden.
For the Glaze:
  • Whisk together the butter, milk, and Lester's Fixins Maple Syrup Soda (available at Crave Candy and Soda). 
  • Add the powdered sugar, a little at a time, whisking until smooth and creamy. (You may not need all the powdered sugar, just depending on how thick you want your glaze.
