We are based in Saxapahaw, created by fermentation enthusiast Taylor Westbrook. Our specialty is non-soy tempeh, an artisan blend of legumes, peas, lentils, and seeds to create a well-balanced and highly digestible plant protein with a fantastic texture and versatile flavor. Now you can pair our tempeh with tasty, gut satisfying sauerkraut.

Chapel Hill Creamery
The cows are still grazing nice grass which is such a treat for July and August. We give them shade in the middle of the day and give them a fresh paddock to graze overnight. You'll see the golden color of the carotene in our fresh and semi-aged cheeses. Enjoy tomatoes while they are still plentiful and celebrate summer with our cheese and meats.

Farmhouse Cheese: This Saturday Fresh Mozzarella and fresh Dairyland Farmers, we have Thunder Mt. Swiss aged since November, savory Hickory Grove, Calvander, washed-rind Danziger, Carolina Moon, New Moon, and probably some spice Farmers (either Hot or Cool Dill). Add farmers cheese to chopped salads with cucumbers and cherry tomatoes, or tomato sandwiches; grate Calvander for homemade Pesto. Thunder Mt. Swiss is our strongest cheese and perfect to add to a squash casserole with sweet peppers or a grilled cheese sandwich with sauteed mushrooms

Pastured Beef:  SPECIAL PRICE: Ground beef will be 2 packs for $12.00 and lean Ground Round is 2 packs for $14.00. We also have a few steaks. Make a great cheeseburger with our Hickory Grove cheese; use ground round for a taco salad with our Farmers cheese. 

Whey Fed Pork:  We have ground pork and various flavors of sausage. Bratwurst, Chorizo, Smoked Andouille, Sage and Maple Breakfast Links, and Mild breakfast in bulk pack. Check our board to see what else we may have and plan your menu! Throw some mild Bratwurst on the grill or use Andouille for some gumbo.

Fruchtenicht Honey
An unpleasant feature of having bee outyards is the presence of ticks and chiggers. There is usually some grass that got a little too tall or some bushes and the beekeeper is often immobile for periods of time allowing these jolly animalicules to come on board.

We have four species of ticks in NC but in this area the lone star tick (white splotch on the thorax of the adult) predominates. Ticks have three recognizable phases in their life history: the larval stage about the size of specks of pepper, the nymph stage about 1/16 inch in diameter, and the adult about 1/4 inch long. If you have the misfortune of standing in a cluster of newly hatched larvae, you can get a hundred or so of the little demons on your leg and tiny though they be you will notice every bite. Scrub them off with alcohol.

The nymphs, often called deer ticks locally, are the likeliest to get you. Fortunately one often tends to feel the adults crawling before they have a chance to bite. If you find a tick attached to you, remove it as quickly as possible with sharp-pointed tweezers. Forget about burnt match ends and oil. If taken off within 24 hours, you will usually avoid the many diseases they can transmit. If you have been bitten by a tick and, say, two weeks later you experience headaches and joint pain, get a Covid test. If negative, suspect one of the tick borne diseases. 

What’s the defense? First, stay out of tall grass during high tick season, March to July. Tick populations fluctuate from year to year, this being a good year.
I draw my socks up over my pant cuffs and spray my boots and cuffs with DEET. Personally, I haven’t had luck with Resmethrin. Dusting with garden sulfur in an old sock can also help. When you get home, put your clothes in the dryer for ten minutes. Dry heat kills them, a hot wash won’t. Take a shower immediately and look yourself over in front of a mirror. All the above will help with chiggers also.
            
Chiggers are almost microscopic. They drill a hole in you, insert enzymes that retard healing, and suck up the lymph that fills their little personal watering hole. Recently, I’m preferring cortisone cream to nail polish to ease the itching. Chigger bites can irritate for three weeks, tick bites for a month. Avoid them. Aint nature grand.

Blue oysters, lionsmane, Italian oyster, Pink Oyster and perhaps Black Pearls, Cinnamon Caps and Golden Oysters will all be available. We should have some value added products as well including tinctures and mushroom salts.

The nutrition mix is a blend of broccoli, cabbage, and kohlrabi microgreens, while the salad mix is a blend of sunflower shoots, buckwheat, and kale microgreens. The farmer's choice will be a revolving blend of what inspires us each week.

Short Winter Soups makes inspired, high-integrity vegetarian soups using NC-grown produce. Each week, we bring a variety of ready-to-eat and frozen soups by the pint. These days, I'm looking for dinners that come together in less than 30 minutes and don't heat up the kitchen with the oven on. There are lots of nice soups on our menu for Saturday, and we'll be sampling several of them too. Two great meals recently I've made with the COCONUT LIME BROTH are:
  • soup: I heated up the broth, threw in a can of chickpeas and did a quick sauté peppers, cherry tomatoes, and basil from the market. 
  • rice bowl: I use the broth (instead of water) as the liquid for cooking brown rice. Then it's a choose-your-own adventure to pile on the vegetables, protein and garnishes.

Check out our shirts and tote bags with designs based on the bricks of Richard Fitzgerald, an African-American entrepreneur of the late 19th and early 20th centuries. (He was the great uncle of Pauli Murray.) Fitzgerald bricks were used in the construction of many of Durham’s historic buildings, and you also see them in the sidewalks near Brightleaf Square and beside other streets near downtown Durham.

By the way, the totes pictured have designs on two sides; the reverse side is a Durham skyline.

August has begun and so has the orchard harvest! This week we will have some very tasty heirloom seckel pears and the start of the asian pears and southern heirloom apples. After watching the orchard grow for the last ten years, it is a little magical to see many of the trees full of fruit this year!  

Plenty of summer goodness from the fields this week too: field tomatoes, cherry tomato pints, peppers, eggplant, okra, garlic, scallions, bitter gourd, cucumber and more nice sweet crunchy Korean melons.
Also look for an abundance of blooms: dahlias, zinnias, marigold, lisianthus and plenty of mixed bouquets.

All our produce, flowers and plants are certified naturally grown for healthful foods from healthy fields!
