We spotted Halloween decorations at a local store weeks and weeks ago. So perhaps we’re late to this game. For Halloween and for the Day of the Dead (Día de Muertos) we have a variety of skull-themed T-shirts. Some of the skulls (calavera in Spanish) are quite colorful. By The Brook Tempeh will be offering tempeh and handcrafted sauerkraut at market, as well as other tasty ferments throughout the season.
We are based in Saxapahaw, created by fermentation enthusiast Taylor Westbrook. Our specialty is non-soy tempeh, an artisan blend of legumes, peas, lentils, and seeds to create a well-balanced and highly digestible plant protein with a fantastic texture and versatile flavor. When you picture a beehive, you no doubt think of a stack of rectangular boxes sixteen inches across the face and twenty inches deep. Typically the basic unit will be two 10” tall boxes stacked one on the other with a lid and a bottom that allows the bees entry and exit. Inside you will find usually ten thin wooden frames containing the comb, hung from rabbets on the ends. However sloppily the beekeeper may have hung the frames, the bees will have either slightly built out the comb face or chewed a bit of it away to achieve about a 5/16” spacing, the “Bee Space” discovered by the Reverend LL Langstroth in America and some others in parallel in Europe. The hives in general use in America and most of the commercial beekeeping world are called Langstroth hives and seem to be the most productive and versatile hive type. But it’s not the only one.
Honey bees can thrive in any reasonable sized cavity that keeps the rain out, thus in other parts of the world you can find hollow cylinders of clay or wattle, and many different sizes and shapes of box hives, some with possible advantages over the ubiquitous Langstroth hive. One serious problem for beekeepers in developing countries (and here) is the high cost of the parts. Just the wood, lid, bottom, frames, and comb foundation could cost a hundred and fifty dollars.
An alternative is the topbar hive developed by a peace corps volunteer in Kenya which is popular in some hobbyist circles in the US. This hive is a long box with sloping side, perhaps 2-4 ft long by a foot tall and, say sixteen inches across the top. Three quarter inch thick by 1/14” wide wooden strips cross the top with a thin strip of wax or wood hanging from the bottom to guide the bee’s comb building. Bee space is achieved, the bees enter from the front, raise the brood near the entrance, and store the honey to the rear. I built one from found materials for $15 but it takes a table saw and some carpentry skills. I never felt I’d mastered swarm management, mite control, etc. so I stick with the Langstroth I know (haven’t mastered that either). If interested, look into Top Bar Beekeeping by Wyatt Mangum.

Time for more hearty food for fall weather. Use our cheese for a potato gratin, Chile rellenos with Dairyland Farmers, spaghetti with Hot Italian sausage. or a cheeseburger with our beef.
Farmhouse Cheese: We have Ricotta, fresh and tangy Dairyland Farmers’ Cheese, YoYo, Hickory Grove, Calvander, Carolina Moon. and Thunder Mt. Swiss, which was made last January. It has a smooth texture and the nutty flavor of a Swiss for a delicious grilled cheese sandwich or an appetizer with new crop apples. Our batch of Hickory Grove is more moist and has some sharpness to it. Try a sample and use it for snacking or melting. We will probably have Hot Farmers as well, and maybe some Dill.
Pastured Beef: GROUND BEEF IS BACK. We are selling it on special at 2 packs for $13.00. Our customers love it once they give it a try. We have some other cuts including Chuck Roast, so check our sign. Make a cheeseburger with Hot Farmers or Thunder Mt. Swiss.
Whey Fed Pork: MORE PORK IN STOCK! Sage and Maple sausage is our popular breakfast style in pinky links that are sweetened with some brown sugar. Our mild Breakfast sausage with a little sage and red pepper is a bulk pack for making patties or adding to sauteed cabbage. We have Bratwurst, Mild and Hot Italian, Smoked Andouille, Chorizo, Ground pork, Bacon. Pork Chops are cut thick and thin; get them while they last!

Honeygirl Meadery is an award-winning urban meadery in the heart of downtown Durham NC specializing in small batch seasonal meads. We ferment honey and local fruits, flowers and herbs to create delicious, nuanced, food-friendly mead. Every week we bring out a mix of our hand-crafted mead styles, so there is something for everyone!

Piedmont Microgreens is an indoor farm located just four miles from the farmer's market! We specialize in microgreens, which are the youngest stage of vegetable crops. Microgreens are great because they're beautiful, tasty, and packed with nutrients. We will be bringing the following microgreens to the market: sunflower shoots, pea shoots, nutrition mix, salad mix, a farmer's choice, and a few specialty varieties, like cilantro, dill, and onion! The nutrition mix is a blend of broccoli, cabbage, and kohlrabi microgreens, while the salad mix is a blend of sunflower shoots, buckwheat, and kale microgreens. The farmer's choice will be a revolving blend of what inspires us each week.

This week look for last of the summer goodness from the fields: cherry and plum tomato pints, peppers, eggplant, okra, scallions, butternuts and bitter gourd. We also expect some fun fall crops: fresh baby ginger, sunchokes and hakurei salad turnips.
Also look for an abundance of blooms: dahlias, marigold, salvia, gomphrena and plenty of mixed bouquets.
All our produce, flowers and plants are certified naturally grown for healthful foods from healthy fields!

We craft healthy adult lifestyle beverages for any occasion. We support our local farmers using local sustainably and organically sourced fruits, including blueberries, apples and more from our no spray estate farm. Only tree ripened apples are used in our ciders with a focus on traditional southern heritage cider apples.
All of our ciders and wines contain little to no residual sugar and are low calorie. As an experimental winery we have almost no rules with the exceptions being we never add additives like sulfites and we do not fine, filter or pasteurize any of our ciders or wines.

The cooler weather (and a lingering cold) has me craving kimchi stew lately. It’s not really a recipe- you can just add water, a jar of kimchi, and boil it and eat it with rice. You can add tofu or pork as protein, and maybe even potatoes or last of summer zucchini (or even a winter squash!) and that last pepper left on your plants. Maybe you’ll create your own kimchi soup! Experiment and see what you create.
