Easy Fried Chicken with Quick Pickled Okra
 
Easy Fried Chicken with Quick Pickled Okra

Serves 4
½ pound fresh okra, trimmed and halved lengthwise
2 tablespoons kosher salt, divided, plus more for seasoning
1½ cups distilled white vinegar
2 tablespoons sugar
1 bay leaf
1 clove garlic, peeled
1 teaspoon mustard seeds
½ cup fine corn flour, or all-purpose flour
¼ teaspoon cayenne pepper, plus more for garnish (optional)
Freshly ground pepper
2 pounds skin on, boneless chicken breasts, cut in 4 pieces
3 tablespoons coconut or olive oil
Honey, for serving
Chives, for serving
Hot biscuits, optional

Combine okra and 1 tablespoon salt in medium saucepan and cover with water. Bring to a full boil over high heat. Drain okra and rinse thoroughly to remove some of the slime; transfer to a heat-proof bowl or container. Combine 1 cup water, remaining 1 tablespoon salt, vinegar, sugar, bay leaf, garlic, and mustard seeds in medium saucepan. Bring to a simmer. Immediately pour over okra. Let cool to room temperature.

Combine corn flour, cayenne pepper, and a generous amount of salt and pepper to taste on a large plate. Dredge chicken pieces in seasoned flour. Heat oil in a large skillet over medium-low heat. Add chicken, skin side down and cook until browned and crispy, about 10 minutes. Flip chicken and cook until cooked through, 6-8 additional minutes.

Serve chicken with pickled okra, a drizzle of honey, and a sprinkling of chives. Add a biscuit if you really want to make it dynamite.

This summer's sixth annual "Summer Chef Jam" at the Shamrock Pub was another raging success that f eatured chefs from our beloved area restaurants. As a final sendoff on August 31, the Chefs2U food truck gave the crowd a "Chef Thank You Night" and we would just like to repeat that sentiment. Thank you for the food, the drinks and the memories!

  Wine Time at the Bijou 


  The Bijou Café has an exciting new signature wine: the Le Jardin Cuvée Prestige from Les Freres Couillaud winery in France.Bottled exclusively for the Sarasota restaurant, the affordably priced Loire Chardonnay boasts the aromas of pineapples, yellow peaches, apricots and tangerines.It is available at the Bijou by the glass, bottle or case. There are also wine tastings at the restaurant on the first Friday of each month through October (the next is from 5 to 7 p.m. Fri. Sept. 4). Taste the latest variety along with the classics!

   It's island time at Michael's On East in August, as the monthly Epicurean Adventure lands in Jamaica. Have a three-course dinner for $34.95 or a two-course lunch for $18.95.  Items include jerk shrimp brochettes with orange mojo and chopped cilantro; pan-seared mahi-mahi with toasted coconut-cilantro jasmine rice; and coconut cream pie with bruleed bananas and caramel sauce.

      Gecko's Gives Back


Gecko's and philanthropy are practically synonymous. This year, the Sarasota County 4-H Foundation is benefiting from the restaurant's ongoing kindness. The 4-H is the direct beneficiary of the donations raised during the Gecko's 23rd Anniversary and BBQ Party. Gecko's has a long history of providing free meals to tens of thousands of elementary students, as well as supporting area fundraisers and charitable groups.

Life's A Beach


triatholon     The fourth-annual local triathlon, Life's A Beach, is returning to Lido Beach on September 12. Expect an "Almost Anything Goes Swim," "A Five-Mile Chillaxin' Bike Ride" and a two-mile beach run with "kwazy obstacles." Celebrate the feat with a "Bodacious Beach Bash After Party."

A Coastal Collaboration Dinner 



Indulge in some of Manatee County's most delectable fare, listen to a renowned author and help support a good cause-all in one night. From 6 to 9 p.m. Wed. Sept. 2, the Seafood Shack is hosting a Coastal Collaboration Dinner with special guest Vanessa Lafaye, author of this year's Under a Dark Summer Sky. Inspiring the menu are chefs from SOMA Creek Side, Derek's and Sugar Cubed. Tickets are $65 per person (plus tax and gratuity) for a four-course family-style meal and a signed book. The dinner will also raise funds for the Coastal Conservation Association Florida.

Forty Years of Yoder's 


Yoder's Restaurant has been a purveyor of homemade pies and comfort food since 1975, and it's time to thank the loyal customers who helped make it happen. For the 40th anniversary, Yoder's is hosting 40 days of giveaways and prizes, beginning on August 20. Geraldson Community Farm wants you (nonprofit organizations) for the 2015 Giving Challenge from noon Tues. Sept. 1 to noon Wed. Sept. 2. Last year, local nonprofits raised more than $3.12 million for the cause. This year, all donations up to $250 will be matched. Help Geraldson raise money for local agriculture and the healthy eating movement.

Want to learn how to cultivate fresh produce in your backyard? Sign up for the "Growing Edibles Locally" course (from 3 to 5 p.m. Tues. Relish a stunning evening on Siesta Beach with a farm-to-table dinner. At 6:30 p.m. Sat.
