It’s time for the Holidays! Phillips Farms now has hand-decorated Christmas wreaths and door swags in all sizes, in addition to all sorts of fresh fruits and vegetables from the farm. Produce available at Phillips this week includes: Brussels sprouts, broccoli, cauliflower, celery, leeks, spinach, kale, bok choy, broccoli rabe, arugula, radishes, scallions, fennel, beets, carrots, cabbage, fresh herbs, potatoes, onions, winter squash and much more! Apple varieties include: Evercrisp, Fuji, Macoun, Braeburn, Pink Lady and Gold Rush, and don’t forget the freshly pressed apple cider. Fragrant Eucalyptus bunches are still available and great for holiday decorating.

December is here but Cabbage Throw Farm still has an abundance of salad greens. Red and green head lettuce along with crisp romaine and mini gem romaine can be chopped into a Caesar salad or tossed with a citrus vinaigrette and topped with sliced apple, nuts, and pickled red onion. Or have you tried mixed greens with roasted sweet potatoes and toasted sliced chickpeas?!
Spinach, Bok choy, winter squash, garlic, onion, carrots, beets, specialty radish, kohlrabi, turnips, herbs and more will also be at market this weekend. Also available are Comeback Farm potatoes and pears. -Emily

Mushrooms are a must-have for hearty winter soups and stews. Or try roasting them and tossing them into your salads! Primordia is flush on all the mushrooms right now - so much so that they are almost out of harvest bins! Look for a bunch of Black Pearl*, Lion's Mane, Shiitake, Oysters, and even some chestnut mushrooms this weekend!
*Black Pearl is hybrid that blends the hearty texture of a King Trumpet oyster, and the growth style of a regular oyster mushrooms. They have an earthy, umami flavor that's perfect for a meatless main or as part of another dish. You can use the entire mushroom - the cap and the stem.

We have lots of lovely greens this week and the lettuce mix is tender and flavorful. Here's a picture of a pretty red leaf variety that's part of the mix. Fall salads that have bursts of sweetness from fresh apples and dried cranberries, tanginess from goat or sheep cheese and zesty spice from dijon mustard and apple cider vinegar just never get old! Winter Blues: Out 2021 blue cheese-making season started in August. We put a lot of energy into this recipe, building off last year— tossed what we didn’t like, kept what was delicious. We’re really proud of this year’s blue and encourage you to try it. Its creamy, medium-blue profile leaves lots of room for notes of hay, broth, and chocolate to come through.

We have missed you! While the bees are all snuggled into there hives we are still busy cleaning equipment, planning our next season, and enjoying the beautiful honey yield of 2021. We will have an assortment of creamed honeys and plenty of 1lb and 2lb jars. If you are interested in any bulk honey feel free to place a preorder. We love it when our market vendors go on to open their own shops. Congratulations to Kristine Shive and her daughters who opened up Bella's Pet Wellness and Dog Cafe last Saturday at 123 N. Second Street in downtown Easton! Your EFM market manager, and her faithful pup Liam performed an official inspection on opening day and I'm happy to report that this beautiful (and tasty) new shop definitely earned Liam's seal of approval. He went home with a big juicy bone, a beef trachea, some liver jerky (and a slew of Christmas gifts, shhhh...).
Bella's will not be at the December market so be sure to stop by the shop for stocking stuffers and gifts for your furry friends (cats too)!
Kristine has created, a lovely tranquil space that you can share with your pup. She's a wealth of information when it comes to holistic pet care and we look forward to watching her business evolve!

MayaMam Weavers
Mayamam Weavers creates handwoven home goods and accessories, inspired by the rich colors and patterns and traditional weaving techniques of Mayan culture. As well as beautiful, their products are soft 100% cotton, and durable enough for everyday use.
MayaMam began in 2008 as a cooperative of women in Cajolá, a Mayan town in the western highlands of Guatemala. To overcome poverty, the women came together to explore ways to provide jobs within their community, rather than migrate to the U.S. and separate their families. Since then, then cooperative has grown to 20 weavers and seamstresses, all earning fair trade wages while learning the skills to run a business. It also provides on-site childcare and adult literacy classes for the community. Mayamam Weavers in the U.S. is based in Morristown, NJ. See more

House with Heart (HwH) is a charity that provides a home for abandoned children, an education center for impoverished women and children, and an outreach program for needy families in Kathmandu, Nepal. The women in House with Heart’s Women’s Training Program craft beautiful products such as scarves and ornaments and sell them in the USA. All proceeds from your purchase go directly towards their non-profit training program which provides impoverished women with the means to support their families. See more
