Over the past weeks, we have moved our beloved ELC from the Children’s Campus to a virtual world. At the very core of our work is the ability to connect deeply with children, families, and each other. We would like to applaud the heroic efforts of our entire team in working quickly, and with tremendous determination, to reconnect with you and your children from their homes.
 
Words cannot express how grateful we are to you, our ELC families, for letting all of us into your homes during this crisis. Your partnership has never been more powerful. We love your photos, your stories, your time on calls and group emails…all of the time you dedicate to helping us stay connected virtually. We are united because of you and we will return to the ELC strong. Please reach out to us for anything!
 
Family Conferences:
This reciprocal relationship is the true foundation of our work. We’d like to offer you a time to meet with your child’s teachers individually over the phone or through zoom for a parent/teacher conference. We expect that the conference will last about a ½ hour, considering the need to schedule for all families. Teaching teams will create a schedule for you, with your schedule in mind. Be on the lookout for individual class communication about these conferences. All families will receive the written report about their child’s growth and development. The conference time is meant for a further connection about your child. Of course, the conference is optional, but truly a great opportunity for those who can make it work. Teachers will be excited to create goals with you and answer any questions you might have. It could also be a less formal time for just sharing current situations and ideas for support during this time.
 
Outdoor Learning Environments:
Our teams have been hard at work developing curriculum and continuing our shared work on our outdoor learning environments. If your children need a project- or are natural collectors (most of our friends are!)- we wanted to share that we are collecting natural materials to add to outdoor environments. Rocks (painted or plain), pine cones, monkey balls, seedlings…all natural collections are welcome. Doing any outdoor tree maintenance? We would love any tree stumps, logs, or tree cookies upon our return. Thanks for thinking of us!

ELC Families,

We sure am missing seeing your children each day! We are grateful for the opportunity to stay connected through your terrific teachers and you. KITCHEN CORNER
Please enjoy these fun, easy to make recipes from
Allyson and Alyssa, our ELC Nutritionists. 
LUNCH
Chicken and Cheese Quesadillas— 6 servings

6- 8” whole wheat tortillas
1 cup shredded cheddar cheese
3 cups cooked diced chicken
Taco seasoning (optional)
Salsa ( optional)

Preheat oven to 400 degrees. Mix cooked diced chicken, cheddar and taco seasoning in a mixing bowl. Lay tortillas on baking sheet. On one half of tortilla spread 1/2 cup of chicken and cheese mixture. Fold in half and pressed down . Repeat with remaining tortillas. Bake for 15 - 20 minutes or until crispy. Cut in half and serve with salsa.

Bean and Cheese Quesadillas—6 servings

6- 8” whole wheat tortillas
1 cup shredded cheddar cheese
2 cans refried beans
Salsa

Preheat oven to 400 degrees. Spread 1/4 to 1/2 cup of refried bean on half of a whole tortilla. Sprinkle 2 TBSP of cheese on top of the beans. Fold tortilla in half and press down. Bake 15-20 minutes or until slightly crispy. Cut in half and serve with salsa.


We are delighted that you are considering sharing your summer with us! Here is some information about our camp.

The UD ELC Summer Camp offers a comprehensive camp for children who have completed Kindergarten through third grade. Through discovery learning opportunities, campers will foster their passion to learn, think and grow. Campers will have an opportunity to experience the UD campus and community through local field trips that enhance their learning. Over the course of nine weeks, the campers will focus on a variety of themes, built to engage students with the arts, STEM concepts, and specific learning topics. The attached PDF includes more details about our themes.

Camp Dates: June 22 nd through August 21 st
Each camper can sign up for the weeks that work best for their family’s summer schedule, with a minimum of 4 weeks. There are limited purchase of care spots available; POC clients must sign up for the entire nine weeks.

Camp Hours: 9:00 am to 4:00 pm
Extended day available and included in the cost (7-9 am, 4-6pm).

Camp Fee: $350 per week
Standard camp rates include early drop off, meals, field trips and special events.
