October is Breast Cancer Awareness Month! During this time we raise awareness for the risk factors, symptoms, and treatments of breast cancer, and we recognize and support those that have breast cancer or are survivors! Here at Good Samaritan, we are dedicated to helping our patients maintain a healthy lifestyle to reduce the risk of breast cancer and assist them in gaining access to care if needed. Our theme this year is "Early Detection Saves Lives!"
Women 20 years and older should
begin doing breast self-examinations on a monthly basis. Women 29-39 should have clinical examinations every 3 years. After women turn 40 years and old they should receive their first mammogram (an x-ray of the breast used for diagnosing breast cancer). Women ages 45-55 should get a mammogram every year. Different people have different symptoms of breast cancer. Some people do not have any signs or symptoms at all. Some warning signs of breast cancer areβ€”

  • New lump in the breast or underarm (armpit).
  • Thickening or swelling of part of the breast.
  • Irritation or dimpling of breast skin.
  • Redness or flaky skin in the nipple area or the breast.
  • Pulling in of the nipple or pain in the nipple area.
  • Nipple discharge other than breast milk, including blood.
  • Any change in the size or the shape of the breast.
  • Pain in any area of the breast.

Our Staff has been raising awareness with t-shirts, buttons, bracelets, balloons, banners, and so much more!
Staff and Volunteers enjoyed a weekend at the Heritage Days Festival in Talking Rock on October 16th- 17th. We were able to talk to those in our community, share Good Samaritan's services with those that need them, and enjoy the beautiful scenery!
High-Fiber Zucchini Muffins
The pureed black beans boost the fiber in this recipe without affecting the flavor. You'll be surprised how moist these gluten-free muffins are, and no one would guess that they are made with beans.
Ingredients
  • 1 can Black Beans
  • 1/4 cup Water
  • 2 cup Zucchini (grated)
  • 2 cup Gluten-free baking mix
  • 1/2 tsp Salt
  • 2 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 1 Egg
  • 2 Egg whites
  • 1/2 cup Splenda Sugar Blend
  • 3 tbsp Canola oil
  • 1 tsp Vanilla extract
  • 1 tsp Apple cider vinegar
Directions
  1. Preheat oven to 350 degrees. Line muffin tins with muffin papers and spray with cooking spray.
  2. Place black beans and water in a food processor and blend for 2-3 minutes, until you reach pumpkin consistency. Set aside.
  3. Use a paper towel to wring out excess moisture from grated zucchini, set aside.
  4. In a large bowl combine baking mix, salt, cinnamon, and nutmeg.
  5. In another bowl, whisk together eggs, Splenda Sugar Blend, oil, vanilla, and vinegar. Add black bean mixture and mix well.
  6. Make a well in dry ingredients and add wet ingredients. Mix well.
  7. Gently fold zucchini into the muffin batter.
  8. Spoon batter into 12 muffin cups.
  9. Bake for 22-25 minutes or until a toothpick inserted in the center comes out clean.
  10. Remove from oven and let muffins cool in pan for 10 minutes. Remove muffins from the pan and cool completely on a wire rack.
  11. NOTE: If you don't need to eat gluten-free, you can try making these muffins with a regular baking mix.
