When I have time or when my wife goes on strike, I like to spend a lot of time in the kitchen.  Over the years, I have always been in charge of cooking the fish or game I have been able to bag.

Below is a recipe for Speckled Sea trout I have developed over the last few months.  We had a great Fall catching these tasty fellows, have quite a few in the freezer and my wife and I enjoy this fairly often.  This is so easy, it is silly.


Ingredients:
Speckled Sea Trout Filets
Williams and Sonoma Chile/Lime Rub
Butter
Olive Oil
Lemon 

Sprinkle filets with Chile/Lime rub.  

In a grill pan, put several tablespoons of Olive oil and a pat or two of butter.  On Med-High heat, heat pan until butter/olive oil will bubble when you put the filets in.

Place filets in pan.  Cook on med-high heat for a minute or two on each side, depending upon thickness of filets, until middle fish is cooked. Do not overcook.  Remove filets from pan onto a warmed plate.

Drop a pat or two of butter into the hot pan; squeeze the juice of one lemon into the pan. Swirl the butter and lemon juice around in the pan, combining with the browned butter/olive oil from cooking the fish.  Pour over filets and serve while hot.   

Serve this with stone ground cheese grits or smoky cheese risotto and sauteed spinach or a salad, and you have a meal fit for a king.

Thanks to all of you who chose to spend time fishing with me this year.  We had a great year. I have some of the greatest clients in the world. I truly enjoy helping you catch your first or 100th red fish on the fly rod.
 
You all realize this is a challenge.  Even if you didn't "bring one to the boat" during our trip, all of you enjoyed the time on the water and had a learning experience.

If you have a chance to take a mid winter vacation, try to get to SSI to enjoy some of our clear water fly fishing.
 
April and May will bring floating triple tail in front of Jekyll and our first tailing tides of the year.  
 
Later this year, I will send out dates where the tides should be high enough to flood the grass flats.
 
We should have 40-50 days of tailing tides again this year.  I have some awesome new flats I fished the end of last summer where we got shots at 20-50 fish on a tide.  Try to plan a trip to SSI during those dates.  
 
The low tide fishing will continue every day. When the weather gets hot, so does the low tide fishing.  Spring is a great time to sight fish on the low tide.
 
Summer and early Fall will bring more tailing tides and the rush of shrimp out of the creeks. In October and November the trout fishing was off the charts.  Barring a major freeze this year, the fall of 2013 should bring another banner year for Sea Trout.  I can't wait to fish for some big trout next summer off the beach of Cumberland Island or to sight fish the "ditch" on high tides in Christmas Creek.

December/Early January Fishing Report
 
I can't believe it has been almost two months since I have written a new report.  Like any other type of sight fishing, the best weather for sight fishing for red fish is light winds and bright skies.  So far this winter, we have experienced the extremes of  freezing temperatures to, right now, 80 degree days.  Our water temperatures have fluctuated from the 52 degrees to 59 degrees.

Through all of this, our red fish have remained in their large winter time schools.However, they seem to be moving around more than usual, and we have to spend some time looking for them.  

We normally sight fish reds for two to three hours on either side of the low tides.  Low tides push the fish out of the grass and concentrate them at creek mouths or in deeper water just off of mud flats.  Fly fishing for them has been tough as the tide recedes, but the fish really seem to put on the feedbag as soon as the tide turns.  Christian and his Dad, Ken, fished with me the first of this week.  We were fishing the back of a creek on the falling tide, and had to resort to DOA's and bait to put a few red fish in the boat.  When the tide started coming in, we  moved to a creek mouth where we found dozens of red fish tailing, finning and moving around and up the creek. We pulled out the fly rod. Christian had four fish eat his Chernobyl Flash Bang fly, but for some reason, after a short fight, they spit the hook.  That's fishing.

I had Eliot join me for a short trip earlier this month.  Eliot is a great caster, who could give me lessons.  We fought dirty water and East winds, but were able to come up with a few fish.
On a day in late December, Ed, a great client, came down to enjoy some of our winter time fishing. I have been making long runs recently to get away from some of the pressure around St. Simons, and this time it payed off handsomely. We timed the trip on the neap tides, so the water was super clear.  We had calm winds and bright skies, which are perfect for sight fishing.  We were rewarded with hundreds of red fish finning, and moving around the low tide flats. It was obvious Ed had been practicing his casting,and he connected for his first, second, third and fourth red fish on the fly.




This winter time pattern of red fish will continue until early to mid March.  Most people believe the winter is the best time to sight fish for red fish in S. Georgia.  While I believe anytime you can go fishing is the best time to fish, winter time red fishing is outstanding.  Give me a call and let's go,

The ramp for Capt. Larry to access the shop is in place.  Ellen is waiting for a new door to be installed, and then Capt. Larry will be able to be back in the shop.  As most of you know by now, Larry is a dear friend, who suffered a stroke earlier this summer.
 
We are all looking forward to having Larry back in the shop.  Larry is a encyclopedia of fly fishing information around St. Simons  who is more than willing to share his knowledge with us all.  Until he can get in the shop, he is working on his "Semper-Fi" flies project, and his wife Ellen, with the help of some good friends, is managing the shop.  

Ellen has a good winter clearance sale going on at the shop now.  The sale, along with fly tying supplies, information and some new flies, makes St. Simons Outfittes a "must visit" while you are in St. Simons.    

Who knows, Capt.  Larry might be back at work when you stop by.  That would be a treat.
