RMI Celebrates Milestone Anniversaries
The RMI Team was thrilled to be back together in person for our annual holiday luncheon On Friday, December 10, 2021.

This holiday gathering was extra-special. It was the first time since February 2020 that the gang has gathered together face-to-face, sharing food, drinks and lots of laughs.

Each year at this gathering, we take time to celebrate company milestones for years of service at RMI. This year the following employees were honored and acknowledged:

Cold Weather Tips for Our

RMI Cooks! Comfort Food
What could be better than a hot bowl of soup on a cold day? Debbie McLain's simple and delicious chicken dish inspired by the classic French Onion Soup is the perfect winter warm-up!

Debbie's French Onion Chicken
  • 1 1/4 lb chicken thighs 
  • 3 Tbsp flour
  • 2 Tbsp vegetable oil
  • 1 large (or 2 medium) onions, sliced thin
  • 1/2 tsp dried thyme
  • 1 cup chicken broth
  • 4-6 slices Swiss cheese
Preheat oven to 425. Season chicken with salt and pepper. Toss with flour to coat.

In a 12 inch oven-safe skillet, heat 1 Tbsp oil on medium-high. Add chicken and cook 5-10 minutes per side (depending on how big/thick the thighs are) until browned. Transfer to plate and keep warm.

Add 1 Tbsp oil to skillet, along with the onions and thyme. Cook 8-10 minutes, stirring often, until onions are golden.

Add chicken broth to the skillet. Return chicken to skillet. Spoon liquid and onions over chicken. Place a slice of Swiss cheese over each chicken thigh. Transfer to oven and bake for 15 minutes until cheese melts and chicken is cooked through.
