I met with the amazing management team of Trep Café (short for entrepreneur) yesterday. Trep is a student-run small business which operates as a non-profit organization that funds student scholarships. It is a fully-functioning café and coffeehouse that serves the Leeds School. Trep was founded in 2005 by a few Deming interns and students. It is 100% run by the student team. They make decisions on HR, Operations, Marketing, Inventory Management, Supply Chain and Finance. When I pause and think about it, it's truly amazing! For over 11 years, our Leeds students have autonomously run a successful café, not only delivering invaluable real-world experience to our students, but also awarding over $100,000 in scholarships to disadvantaged students. It's just another example of how energized the entrepreneurial spirit is at Leeds and CU. Way to go Trep team! Oh, and I hear the crew makes a mean peppermint mocha. Next time you're at Leeds, swing by and try one!

Meet Hannah Sakalla and Audrey Jackson, two women who shared a vision of increasing food access in the Boulder community and set out to create a nonprofit. Hannah and Audrey are in the works of opening Ethos, a restaurant and community space that operates on a "pay what you can" model, where p atrons pay only what they can afford in exchange for a meal and an enjoyable dining experience. Astonishingly, r oughly 14% of the U.S. population was "food insecure" in 2014, meaning that 48.1 million people had very little access to quality food.  This inspired the creation of Ethos, whose main goal is to create a safe space where those with socioeconomic disparities may dine together harmoniously and with dignity. Audrey and Hannah believe that everyone deserves the opportunity to have a nutritious meal and commune with fellow Boulderites- whether or not they can actually afford to do so. Ethos hasn't set a target date for its opening, but is hoping to open its doors to feed Boulder in Spring 2017. Until then, Ethos is looking to receive advice or critiques from members of the community. Specifically, the company is interested in collaborating with others who want to contribute their ideas about marketing and the pay what you can business modelContact ethoscafeboulder@gmail.com if you would like to get involved!
