PUMPKIN MUFFINS
INGREDIENTS
  • 2 1/4 cups self-rising flour
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1 cup brown sugar (packed)
  • 1 cup canned pumpkin
  • 1/3 cup buttermilk
  • 1/3 cup oil
  • 1/3 cup molasses
  • 1 teaspoon vanilla
  • 2 large eggs
  • sugar (confectioner’s sugar, optional)

DIRECTIONS

  • Prepare a muffin tin with paper liners, set aside. Preheat oven to 375°F.
  • In a bowl, add the brown sugar and eggs, beat with a whisk for several minutes. Then add the spices, oil, buttermilk, molasses, pumpkin and vanilla. Whisk until well combined.
  • Add the self rising flour and blend in until everything is combined. Do not over mix.
  • Add the batter to the prepared muffin tins. Bake for 15 minutes or until a wooden pick inserted in center comes out clean. Remove muffins from pans immediately; cool on a wire rack. Sprinkle with confectioner’s sugar.
