July Webinar Recap: Long Term Food Storage
Dr. Carla Schwan, Assistant Professor & Food Safety Extension Specialist with the University of Georgia and Director of the National Center for Home Food Preservation, shared her wealth of knowledge on the safety of storing food for emergencies. In this webinar, Dr. Schwan starts off with why we store food and the dramatic changes to food storage behaviors and prices that were brought on by the Covid-19 pandemic. With many restaurants closed down, people were cooking more at home, access to shopping was limited, supply issues led to bare shelves and there was an increase in demand for healthier foods and an increase in home gardening. All of these factors led to people wanting to be more informed on food preservation and storage. Dr. Schwan then shares the principles of storing food for both safety and quality and the factors that affect both. Tips and best practices for drying, freezing and canning foods are shared along with guidelines for emergency pantry foods.
