A FEW WORDS FROM CHEF DANIEL
I’ve been in a kitchen since I was a kid and from what
I can remember one of my grandmothers was always cooking up something amazing for everyone in the house. I was one of the lucky ones usually that got to hang out in the kitchen and so it obviously rubbed off after many years. It’s been a windy road from my early dishwashing days but it’s all been worth the ride.
I started a catering company somewhere around 2006 in Hollywood and that was a great experience. It gave me an opportunity to get my feet wet in the entertainment world. Applying French technique and childhood memories with quality meats, cheeses and vegetables always worked well.
After a few years, things changed in the entertainment business and so I ended up leaving Los Angeles and headed east to the Coachella Valley. Upon arriving to the desert I realized quickly that it was very different than the big city I had been in for over 20 years. Surrounded by mountains, agriculture, hot springs, and native culture reminded me of my early history studies in high school.
I was being guided while searching for something new but I didn’t know exactly what I was in for. I worked in various fine dining restaurants before settling into private chef work that kept me busy for a while. I got married in 2013 and we opened a restaurant called Balisage Bistro in early 2014. We finished that agreement and decided to take some time off. A trip to Juneau, Alaska in 2017 and a detailed discussion with Sue Hoffman inspired us to open Daniels Table in June 2018.
I feel compelled to bring the fruits of the trees and the bounty of the fields to our guests. Sourcing only grass fed animals, wild game and fish for our made from scratch dishes and creating a lasting experience for everyone involved. Much focus, hard work, research, dedication and consistency goes into providing the best sourced foods from local farmers, ranchers and great fisherman that share in the passion of not trading their great standards in for a smaller prize.
I will stay true to the earth, the culture and the food that it provides for us and share this food journey with you. We will create unique dishes that fit the travels of our European ancestors into Native America.
