Sheet Pan Lemon Chicken and Potatoes
1/3 cup oil
1 Tblsp salt
1 1/2 tsp thyme
1 1/4 tsp pepper
4 garlic cloves
1 lemon - zest and juice
6 chicken parts
2 pounds potatoes but into 2" pieces
1 onion - sliced
Preheat oven to 425°F
Wisk oil, salt, type, pepper, garlic, lemon zest and juice in a large bowl.
Add chicken, potatoes, onions and lemon wedges to a sheet pan.
Pour olive oil mixture over the pan and toss.
Roast in the middle rack, rotating halfway through, until chicken registers 165 degrees.
